Okay so I’m officially on a mission… I’m learning how to make kimchi.

I tried store bought before and it was a little too fermented for me, so now I’m making my own. Gresh, small batch, and (hopefully) perfect.

I’m weirdly excited about this lol 😊

Here is the recipe I am going to use:

🥬 Fresh Small-Batch Kimchi (Mild & Balanced)
Traditional-Inspired • Beginner-Friendly • Light Fermentation

🛒 Ingredients

Cabbage

- 1 small napa cabbage (or ½ large)
- 1 tablespoon coarse sea salt

Rice Paste

- 1 tablespoon rice flour
- ½ cup water

Kimchi Paste

- 1 tablespoon gochugaru (Korean chili flakes, coarse)
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon sugar
- 1 tablespoon fish sauce (or soy sauce)
- 2–3 tablespoons grated Fuji apple
- 2 green onions, chopped
- 1 tablespoon shredded carrot (optional)

🥣 Instructions

1. Salt the Cabbage
Chop the cabbage into bite-sized pieces. Toss with salt and let sit for 30–45 minutes. Rinse thoroughly and drain well by placing in a colander for 15 minutes or so. You don't want your cabbage to be too dry but not overly wet either.

2. Prepare the Rice Paste
In a small pan, combine rice flour and water. Cook over low heat, stirring constantly, until it thickens to a smooth, pudding-like consistency. Allow to cool completely.

3. Make the Kimchi Paste
In a bowl, mix the cooled rice paste with gochugaru, garlic, ginger, sugar, fish sauce (or soy sauce), grated apple, green onions, and carrot (if using). Stir until smooth.

4. Combine
Add the drained cabbage to the paste. Mix thoroughly, ensuring all pieces are evenly coated.

5. Pack the Jar
Transfer to a clean jar. Press down firmly to remove air pockets, leaving a little space at the top.

⏳ Fermentation Guide

At 66–68°F (18–20°C):

- 24 hours: Fresh, mild, and crisp
- 36–48 hours: Lightly tangy and balanced

Taste after 24 hours. Refrigerate when it reaches your preferred flavor.

❄️ Storage

Store in the refrigerator and enjoy within 5–7 days for a mild taste. Flavor will continue to develop over time.

💡 Notes

- Fuji apple adds gentle sweetness and balance
- Use coarse sea salt for best results
- Adjust gochugaru to your spice preference
- If the kimchi becomes too sour, use it in fried rice or soups.

I don’t know how to say this anymore, but I’m begging you—please don’t look away.

15 rescue workers were killed. Medics. Paramedics. Aid workers. People who devoted their lives to saving others. They responded to calls for help in Rafah, Gaza after Israeli airstrikes. When they didn’t return, more ambulances were sent to find them. They never came back either.

A week later, their bodies were discovered buried in a mass grave. Bulldozed over. Crushed along with their ambulances. No dignity. No mercy. Some still had their medical gloves on.

These were not soldiers. These were not combatants. These were people who ran toward the dying. And they were slaughtered.

And yet… Israel claimed they were Hamas. That’s all they had to say. No proof. No names. No faces. Just… “Hamas.” And for so many people, that was enough.

Are we really so far gone that saying “Hamas” justifies executing medics and burying them like garbage?

If Hamas was really using those ambulances, why would international groups like the UN and other reputable sources say otherwise?

This is what scares me most. Not just the killing—but how desensitized people have become. A dying child, a murdered medic, a bombed hospital — and all it takes is one word from Israel and suddenly, no one cares. The humanity is gone.

I’m not asking you to take a side. I’m asking you to feel.

To stop and think about what it would mean if this happened anywhere else.

If this were Ukraine, and Russian troops murdered Red Cross workers and buried them — would you still say “Well, they must’ve been terrorists”?

Would you still defend it?

We have to stop letting one word — "Hamas" — erase an entire people’s suffering.

Please, I’m not trying to argue. I just want you to see what I see. To remember what it means to be human. To feel the weight of a medic’s blood-stained glove in your heart. To ask: What kind of world are we letting happen?

The world is watching. And history will remember. But most importantly — so will your soul.

So, I bought The Sims 3 back in 2009. Digital downloading wasn't a thing yet. I had MANY Expansions CD's. I even kept my computer up to date because installing The Sims 3 Games on a new computer with your CD games was a NIGHTMARE!

Fast forward to present date. I had long misplaced all of the CD Expansion Games. So I thought I had lost all ability to be able to regain access to my Sims 3 game and the Expansions I bought all those years ago.

Well, I've had my EA account for like 15 years, since 2009. So out of curiosity I went to the order history. And wouldn't you know it, I found ALL the Sims 3 Expansions I had bought! I couldn't believe it!

I was able to re-download them and now I'm getting ready to geek-out on some Sims 3!
