Chef Up North is the official catering brand of Counted Me Out Productions, LLC, founded by Troy Williams (Trizzmatic), a chef & Hiphop artist whose journey from the prison cell to the professional kitchen inspired a movement.

Two years ago, this story looked very different.
There was no certificate.
No chef coat.
No catering events.
No Favorite Chef
Just a dream, a passion for food, and a decision to take a chance on myself.
This video isnāt really about a competition.
Itās about growth.
Itās about the long days, the sacrifices, the lessons, the setbacks, and the moments when quitting wouldāve been easier than continuing.
What youāre watching is more than a culinary journey. Itās a reminder of what can happen when you commit to becoming more than you were yesterday.
From home cookingā¦
to culinary schoolā¦
to graduationā¦
to building Chef Up Northā¦
Every step mattered.
And while Chef Up North is to be competing in Favorite Chef, the greatest reward has already happened.
I got to see myself evolve.
Thank you to everyone who has supported this journey, believed in the vision, shared a meal, attended an event, voted, or simply encouraged me along the way.

SPRINGFIELDā¦ WEāRE IN THE RUNNING. šØš¾āš³š„š Officially launching my Favorite Chef (2026) campaign.
This aināt just a post.
This is a real competition, and Iām representing Springfield, Massachusetts, Chef Up North, and Counted Me Out Productions on a national level. šÆ
What started as cooking for family, building plates from the heart, catering events, and chasing a visionā¦ has now turned into an opportunity to take this brand even further.
Weāre building:
ā¢ A future ghost kitchen
ā¢ Signature sauces & seasonings
ā¢ A national urban American food brand
ā¢ A legacy rooted in culture, creativity, and community
And now itās time to show people what Springfield is bringing to the table. š½ļøš„

From the classroomā¦ to recognition from the Commonwealth of Massachusetts. šš¾š
Honored to receive this letter from Massachusetts State Representative Angelo J. Puppolo, Jr., Esq.. recognizing my achievement of making the Presidentās List at Southern New Hampshire University.
For those who may not know ā the Presidentās List is a higher academic distinction than the Deanās List, recognizing students who achieve the highest level of academic excellence during multiple consecutive semesters.
As Co-Founder of Counted Me Out Productions, this moment means a lot because it reflects what has always stood for: growth, discipline, education, and transformation.
A reminder that you can build culture, create art, run businesses, raise families, chase visionsā¦ and still commit yourself to learning at the highest level.

Chef Up Northās Culinary Art Institute journey officially began back in Nov. 2024. šØš¾āš³
Back then, I was stepping into culinary school with a vision already growing bigger than the kitchen. Catering events, building experiences, and laying the foundation for what Chef Up North is becoming today.
Now, that same journey has led me into the Favorite Chef competition, powered by Colossal, as we continue building toward:

š„ Signature sauces & seasonings
š„ A national urban American food brand

They printed my story. From sitting in that roomā¦ to now being written into it.
ā ā was never just an event to me ā itās something I lived through.
Grateful to be recognized as a Parent Scholar,
and even more grateful to still be growing.

Thereās been a lot said about this filmā¦ We went to see Michael early ā just to experience it for ourselves.
We made it a date nightā¦ but we were really there for the film.
And honestly?
We loved it.
Jaafar did his thing. You feel it.
Itās more than a movieā¦ itās an experience.
Emotional. Cinematic. Real.
Itās a must see.
Weāre going back to watch it again.
