Pumpkin is for more than just pie!
Here is a recipe I received for Pumpkin Ravioli from the Northern Virginia Academy of Nutrition and Dietetics’ November Newsletter. It was tested and approved by my current dietetic intern, Lauren Burkett. It could also be made with butternut squash puree with remarkably similar results and nutritional benefits.
The fiber, potassium, and vitamin C content in pumpkin all support heart health. Studies suggest that consuming enough potassium may be almost as important as decreasing sodium intake for the treatment of hypertension, or high blood pressure. With more potassium than a banana, it’s a great way to eat seasonal.
Pumpkins contain a wealth of antioxidants. Vitamin C, vitamin E, and beta carotene support eye health and prevent degenerative damage in older adults.
Beta carotene is a powerful antioxidant and gives orange vegetables and fruits their vibrant color. The body converts beta carotene from your diet into vitamin A and may help reduce the risk of developing certain types of prostate and colon cancer.

These high-protein cinnamon apple muffins were made using Kodiak Cakes buttermilk pancake mix. Made with whole-wheat flour, they’re packed with protein and whole grains to keep you full and satisfied. Grated apple provides a sweet flavor while also offering extra nutrients and fiber. Ever wonder where your milk comes from? I got to tour a dairy farm this morning and it was fascinating! Very environmentally friendly and humane. A PhD in bovine nutrition develops special diets for the cows depending on the cow's age and gestational status. Super interesting! 11/05/2018

Had a great time helping a young lady celebrate her 50th birthday with some life-long friends! Here are some quick tips for storing your groceries from the Academy of Nutrition and Dietetics. The only one I don't agree with is storing tomatoes in the refrigerator. I keep mine on the counter unless they are cut, then they go into the refrigerator. What do you think?


My prayers have been answered and I have a new Chef on board. Chef Wendy Shank has signed on with us and I am so happy! She has lots of expertise with cheffing and special events and will be a great asset to the company.

Had a great time at the USPCA Annual Conference in San Antonio. Thanks to all that came out to the Alternate Business Structures and Seasoned Chef Panel Sessions. I loved seeing everyone again and meeting new, innovative and energetic chefs from around the country. Cant wait for 2016 in Providence!

For my fiance's birthday this year I wanted to do something special. However, I am certainly no chef. I employed the services of Chef Jade Menio. She outperformed all of my expectations. I informed her that my fiance's favorite foods were crab legs, macaroni & cheese, asparagus, and chocolate dessert. Jade took it from there! She shopped, prepared, cooked, set the table, served, and cleaned. I did not have to lift a finger. The food was delicious and the presentation top-notch. I should have seen it coming, but Chef Heather is quitting to get ready for the move. I just sign up a new client for her and will now be covering that myself. Life is getting a bit crazy-busy, but it is what it is...until it changes again!!! Good thing I still love to cook!


So happy for my Chef Heather as she ties the knot this weekend, but sad to hear they will be moving to Japan in the Spring.
