Beef Meximelt Cheesy Taco Ingredients: 1 lb lean ground beef, 1 packet taco seasoning, 2/3 cup water, 8 large flour tortillas, 1½ cups shredded cheddar or Mexican blend cheese, 1 cup shredded mozzarella or Monterey Jack cheese, 1/2 cup sour cream, 1/2 cup diced tomatoes, 1 tbsp chopped fresh cilantro, cooking spray or butter for baking. Instructions: Preheat oven to 180°C. In a skillet over medium heat, cook ground beef until browned, then drain excess fat. Add taco seasoning and water, stir well, and simmer for 5–7 minutes until thickened. Warm tortillas slightly to make them pliable. Spoon beef mixture onto each tortilla, top with cheddar and mozzarella cheeses, then roll tightly. Place seam-side down in a greased baking dish. Lightly brush tops with butter or spray. Bake for 15–20 minutes until tortillas are golden and cheese is melted. Serve hot topped with sour cream, diced tomatoes, and cilantro.

Crab & Shrimp Stuffed Salmon Ingredients: 2 salmon fillets, 1 cup jumbo lump crab meat, 1/2 lb shrimp peeled deveined and chopped, 4 oz cream cheese softened, 1/2 cup shredded mozzarella or parmesan cheese, 2 cloves garlic minced, 1 tbsp lemon juice, 1 tbsp fresh parsley chopped, 1 tsp paprika, salt and black pepper to taste, 2 tbsp olive oil, lemon slices for serving. Instructions: Preheat oven to 190°C. In a bowl mix crab meat, shrimp, cream cheese, shredded cheese, garlic, lemon juice, parsley, paprika, salt, and pepper. Cut a pocket lengthwise into each salmon fillet. Stuff generously with the crab and shrimp mixture. Heat olive oil in an oven-safe skillet over medium heat and sear salmon for 2–3 minutes per side until lightly golden. Transfer skillet to oven and bake for 12–15 minutes until salmon is cooked through and filling is bubbly. Serve hot with lemon slices.
