"Fresh red snapper with roasted veggies — light, flavorful, and full of goodness. Eating healthy can still taste amazing!”

Garlic Lemon Red Snapper with Roasted Veggies
Ingredients
2 red snapper fillets
1 zucchini, sliced
1 yellow squash, sliced
1 red bell pepper, sliced
1 small red onion, sliced
1 cup cherry tomatoes
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon black pepper
½ teaspoon salt
Lemon slices
Fresh parsley, optional
Directions
Heat oven to 400°F.
Place zucchini, squash, bell pepper, onion, and tomatoes on a baking sheet.
Drizzle veggies with olive oil, garlic, Italian seasoning, salt, and pepper. Toss well.
Roast veggies for 15 minutes.
Season red snapper with lemon juice, paprika, salt, pepper, and a little olive oil.
Place the snapper on top of the veggies. Add lemon slices on top.
Bake for another 12–15 minutes, or until the fish flakes easily with a fork.
Sprinkle with parsley and serve warm.
Serving idea: Pair it with brown rice, quinoa, or a side salad.

🥗 Low-Fat Grilled Chicken Salad
Serves: 2

🛒 Ingredients:

* 2 boneless, skinless chicken breasts
* 1 tsp olive oil (don’t go heavy here—that’s where fat sneaks in)
* 1 tsp garlic powder
* 1 tsp paprika
* ½ tsp black pepper
* ½ tsp salt
* Juice of ½ lemon

Salad base:

* 3 cups romaine or mixed greens
* ½ cucumber, sliced
* 1 cup cherry tomatoes
* ¼ red onion, thin sliced
* Fresh parsley (optional but adds flavor without calories)

Low-fat dressing (THIS is the key):

* ½ cup plain nonfat Greek yogurt
* 1 tbsp lemon juice
* 1 tsp Dijon mustard
* 1 tsp honey (optional, keeps it balanced)
* 1–2 tbsp water (to thin it out)
* Pinch of salt & pepper



🔥 Instructions:

1. Season the chicken
* Rub with olive oil, lemon juice, and all spices
2. Cook it
* Grill or pan-sear on medium heat
* About 5–6 minutes per side
* Let it rest, then slice
3. Build your bowl
* Toss greens, cucumber, tomatoes, and onion together
4. Make the dressing
* Mix everything until smooth
* Add a little water so it drizzles (not thick like dip)
5. Assemble
* Add sliced chicken on top
* Drizzle lightly (don’t drown it—that defeats low-fat)
