MEDITERRANEAN PANTRY PASTA🌿
This was my lunch today. Everything comes from a frozen or shelf stable product.
One pouch of linguine pasta. Frozen peas. Frozen artichoke hearts. Golden bell pepper. (Optional tofu-I used mock chicken). Slivered almonds. A jar of TJ's bruschetta tomatoes straight over the top. Fresh basil from the window.
Fifteen minutes. No recipe needed. No planning required.
This is what whole food plant-based eating actually looks like on a Monday—with zero energy.
Not perfect. Not precious. Just whole food made from what you already have.

Whipped “Feta” & Pistachio Dip
Ingredients
* 1 block extra-firm tofu (pressed)
* 2 tbsp lemon juice
* 1 tbsp white miso
* 1 tsp capers (optional, for feta-like tang)
* 1 small garlic clove
* 2–4 tbsp unsweetened plant milk
* ¼ tsp dried oregano
* Black pepper to taste
Topping
* ¼ cup shelled pistachios, roughly chopped
* 1 tbsp lemon zest
* Fresh parsley or mint, chopped
* Pinch red pepper flakes
* Optional drizzle of good olive oil (or omit)
Directions
1. Blend tofu, lemon juice, miso, capers, garlic, oregano, and plant milk until completely smooth and fluffy.
2. Taste and adjust:
* More lemon = tangier
* More miso = saltier
* More capers = more feta-like
3. Spread onto a shallow plate or bowl.
4. Top with pistachios, lemon zest, herbs, and red pepper flakes.
Mint is the easiest thing to grow. If you can’t grow mint, there’s problems we’re gonna need to address.
