I am officially ready for spring!
This morning it was under 40 degrees when I woke up, in Florida!
Waiting for temperatures to improve and in the meantime cooking spring veggies like those pretty asparagus.
How do you like to cook yours?
Personally I like them braised in a little butter, with a good bite to them and a sprinkle of sel de Guérande and piment d'Espelette...

Perfect weather for a Boeuf Bourguignon...
Vegan and Vegetarian friends, just substitute the meat by big chunks of mushrooms like for example Lion's mane or Portobello, and do not worry about the little bits of pancetta added with the bell onions, if you like the taste add just a dash of liquid smoke.

December is here! That means that this month chocolate calories don't count, right?
One of my favorites are those citrus skins, candied in a light syrup, and coated with a crispy chocolate skin.
I like to make them with all kind of citruses: oranges of course, but also grapefruits or lemons.

If you are looking for a new potatoes casserole to make for this Thanksgiving (in 2 weeks! can you believe...) here is a suggestion: the French gratin dauphinois.
Layers of very thinly sliced potatoes alternated with a cream, garlic and nutmeg mixture...
I promise you won't regret it.

When you stumble on white Indian eggplants...
Eggplants sauteed until soft, seasoned with tomato paste, garam masala, dry cilantro, a little honey (those eggplants can be bitter, note to self: add more honey next time), salt and pepper. I then placed the eggplants in an oven pie dish, oiled and scattered with chopped pistachios. Cover with puff pastry and cook 20 to 25 minutes in a 400 degrees over.
Turn upside down before serving.

The secret to a delicious ratatouille? Sear each group of vegetable separately so they stay colorful and not mushy when the ratatouille is served.

As I am still waiting for my new ovens to be installed I am daydreaming of past bakes: here is a delicious "Paris Brest".
The Paris Brest was created to honor the cyclist of that famous French race, and features a praliné filling.
