Crustless Protein Pumpkin Pie Recipe Makes 6 slices. 103 calories, 1g fat, 19g carbs, 8g protein per slice Ingredients: - 15 oz pumpkin puree - 1 cup milk of choice (I used 1% fairlife for the protein content) - 3 tsp pure vanilla extract - 2 tsp cinnamon - 2 tsp baking powder - 1 tsp pumpkin pie spice - 1/2 tsp salt - 1 scoop or 35 g Vanilla Whey Protein Powder - 1/4 cup Truvia (sugar + sweetener blend) - 2 tsp cornstarch Method: - Preheat oven to 400F and spray pie plate - In a large bowl combine all ingredients together and pour into pie plate. Bake for 30 - 35 minutes - Allow to cool completely before putting in the fridge. It might still be gooey after baking, that is okay, it will set in the fridge.
