Spaghetti alla Carbonara:
1 pound spaghetti
6 ounces pancetta or bacon, diced
3 cloves garlic, minced
3 eggs
1/2 cup grated Pecorino Romano cheese
1/2 cup grated Parmesan cheese
Salt and black pepper
Cook the spaghetti in salted boiling water until al dente. Meanwhile, sauté the pancetta or bacon and garlic in a pan over medium heat until crispy. In a bowl, whisk together the eggs, Pecorino Romano, Parmesan, salt, and pepper. Drain the spaghetti, reserving 1/2 cup of the pasta water. Add the spaghetti to the pan with the pancetta or bacon, and toss to combine. Remove from the heat and pour in the egg mixture, tossing quickly to prevent the eggs from scrambling. Add some of the reserved pasta water as needed to create a creamy sauce.
