I love bitter foods. It’s celebrated in many of the world's favorite foods; everything from coffee, chocolate, mustard, tea, kale, etc. In Southeast Asia, it’s with bitter-melon. Its distinct bitterness is associated with “cooling properties” associated with alkaline foods. And is linked to lowering the body’s blood sugar. In my search for bitter-melon, I connected with a bitter-melon farmer (and expert) on how she likes to eat bitter melon.

"Bitter-melon is my favorite," says Ge Moua, owner of Moua farms." Bitter-melon has so many health benefits. And my husband and grandson love it when I stuff bitter-melon with pork and make it into soup." Even though Ge and I come from different diasporas (Ge of Lao-Hmong, my family of Vietnamese) we shared this common love for bitter-melon, particularly in this recipe.

I have an idea because I was thinking how often do family health plans usually cover the family, meaning father, mother, son, and daughter... Almost always until the youth are employed with a full time position... Sometimes then their health coverage is no longer as good as their parents, especially if they change policies... For standard health needs that may still be acceptable... But what about even when all are adults and the health care is not as good like for cancer or if even if the person with cancer is then jobless... How are they supposed to get covered... They should have a way that the insurance could again be covering the son’s and daughter’s as adults if they move back under the same roof of their also adult parents that are still being covered with better insurance... Without a pre existing issue... How long is cancer treatment usually??? I can give an example of a family member and it’s comparison was about three to five months to have full chemotherapy and then immunotherapy and the medical expenses were not daily... If the person does not beat the cancer then it was short term expenses covered and no major profit loss from the insurance company... And if that person does beat the disease then you have saved another life... The point is it doesn’t take a huge plan to find ways around covering more people to have the ability to beat diseases to better statistics but it does take affordability... There is no reason that sons and daughters should not be able to add retired parents to be covered as well in their family plan or the opposite if needed... Think about the crucial diseases that will all fit my idea that should allow this... As well if their are even ways your insurance could find profit from insurance “code red” conversion... Just an example name for such a type of insurance... Maybe the insurance that can’t meet expense coverage should have to pay in damages for not covering their clients is another point... So in return they pay the other insurance a much smaller fee for profit for that stronger insurance can profit and make the option available... That’s just a small idea you can show your board to then maybe build a stronger policy but if you use mine I will just be grateful you have more care for people that can’t afford health care... Also if a friend married a friend that is sick their should be no pre existing insurance policy either... If a person is only given 1 year left to live unless treatment is successful who the hell would wish to wait a year to be excepted by insurance company... This idea will be sent to more then one company so maybe you can talk among yourself of how you and other neighboring insurance companies by state could make this work...

Updated COVID-19 Booster Recommendation

As of last Friday, the CDC has recommended #booster shots of all the Covid-19 vaccines available in the U.S. – #Pfizer, #Moderna and Johnson & Johnson. Who is eligible? Can I mix and match vaccine brands? Do I need one? Here is the information:

CDC recommends that adults over age 65, people over age 18 with underlying medical conditions, or those who work or live in higher risk settings should get a booster shot, as long as sufficient time has passed since completion of the initial Covid-19 vaccines – 6 months for Pfizer and Moderna recipients, or 2 months for J&J recipients.

The CDC said that it is safe to get a booster of the same brand as your initial vaccine, or to pick a different one.

It is important that we understand that while our original dosage of Covid-19 vaccines continue to offer strong protection against severe illness, studies have shown that this protection may decrease over time. A booster shot helps to increase the immunity needed for people considered more vulnerable to the virus, especially for improved protection against the more infectious Delta variant.

Did you know September is the Food Safety Education Month? Let’s take some time and review the importance of safely handling foods! Each year, millions of people get sick from food illnesses. Food illnesses can also cause serious health problems, even death. Follow these four basic steps to help keep you and your family safe. #foodsafety #healthyliving

1. Always wash your food, hands, counters, and cooking tools.
2. Keep raw meat, poultry, seafood, and eggs away from other foods. Do this in your shopping cart, bags, fridge and cutting boards.
3. Foods need to get hot. Heat kills germs. Use a food thermometer to make sure that your food is thoroughly cooked.
4. 2-Hour Rule: Put foods in the fridge or freezer within 2 hours after cooking or buying from the store.

On September 24, the CDC recommended a Pfizer booster for these populations. Note that boosters are now only approved for individuals who received Pfizer vaccine. Other vaccine boosters have not yet been approved by the FDA.
