Throwback Back Thursday to 2018
Before we set up digital roast tracking, it was all pen, paper, and senses. We logged temperatures, ROR, air and gas changes, aromas, color shifts, and every crack and pop by hand. There was something almost hypnotic about being fully immersed in the roast. Now when we have a computer freeze we just jump to old school sensory roasting and pick up the roast where the graph left off. ☕️

We've really enjoyed cupping the Guatemala Raíces this week! We are tasting sweet notes of Strawberry and Cherry, with tropical notes like Guava. It's a fruity treat but still has a very silky, creamy mouthfeel.
It's the perfect cup for anyone holding on to every last drop of summer they can get. 🌞

Meet Raíces, a new coffee we just got in and are super excited about! This traceable blend comes from smallholder farmers in Huehuetenango, Guatemala who do more than grow exceptional coffee. Raíces ("roots") honors producers who invest in their land, their communities, and the next generation. These long-standing partners have stewarded their land for decades. They prioritize soil health, long-term planning, and peer-to-peer learning as they build resilience from the ground up. We are excited to get to roast up this bean and share it with all of you.
