My favorite Chocolate Chip Cookie, a copycat Crumbl. 🍪 by @thefreshcooky and these are A++ in my house!!! Ingredients: • 1 cup butter room temp, salted or unsalted • 1 cup brown sugar • 1/2 cup granulated sugar • 2 large eggs • 1 tablespoon vanilla extract • 3 cups unbleached all-purpose flour • 2 teaspoons corn starch • 1 teaspoon baking soda • 1 ¼ teaspoons salt • 2-3 cups chocolate chips 1. Preheat your oven to 375° F 2. Line a cookie sheet with parchment paper. 3. Beat the softened butter until light and fluffy, about 1 minute. 4. Add both sugars and continue beating until creamed and smooth, between 3-5 minutes. 5. Add eggs one at a time — then mix in the vanilla. 6. In a medium bowl, combine the dry ingredients; flour, baking soda, corn starch and salt and whisk well to combine. 7. Stir the flour mixture to the wet ingredients, a little at a time. 8. Add chocolate chips 9. Scoop dough into a 1/3 cup ball. Tear in half and place top of cookie onto other half, rough side up. 10. Place approx 6-8 cookies per sherry and bake for 10-12 minutes. Two years ago today. Let me just say it was hard times. I am so thankful of where we all are today. 🙏 Our son was an emergency c-section, day before Christmas Eve. He was premature. He was in the ER and ICU the first week of his life. We had a very traumatic first couple weeks making sure he was ok. My postpartum anxiety was like nothing I had ever experienced. But look at us now. Our son is thriving—happy, healthy, and full of energy. We’ve come so far, and I’m so grateful for the journey. Two years ago from today, we also made big changes—listed our house for sale, put an offer one a new one, Scott starting a new job, and I had foot surgery to remove a rare tumor. All in a day. After years of pain and misdiagnosis, I learned how important it is to advocate for your health. Listen to your body—it knows when something is wrong. I took a two-year break to focus on my family and health, but I’m back now. So, if you’re new here, welcome! If you’ve been following, here’s why I disappeared. Can’t believe I waited so long to use this Kitchen Aid tool! We got it for our wedding a few years ago, and I’ve been intimidated ever since. But life got in the way, and I finally gave it a try. No regrets! If you love making your own pasta, this is a game changer. It saved me so much time, and the noodles came out perfect. I used the simple pasta recipe from Magnolia Table (Volume 1) — just flour, eggs, milk, and salt. So easy! This set comes with cutters for spaghetti, fettuccine, and lasagna, and I’ll be making these homemade noodles forever now that I’m no longer intimidated.
