When You Want Pasta But It's 90 Degrees Outside ☀️🍝

Apparently my answer to summer is putting a bunch of fresh vegetables on top of pasta and convincing myself that's balance 😂

This bowl has penne noodles, Beyond Beef, lettuce, tomato, cucumber, mozzarella cheese, olive oil, balsamic vinegar, black pepper, and a splash of liquid aminos.

Not gonna lie, I mostly threw this together because I wanted pasta but didn't want to feel like I ate a brick afterward.

The balsamic and olive oil pull everything together, and somehow I ended up standing in the kitchen taking "just one more bite" about six times.

I don't know if this counts as a pasta bowl or a salad pretending to be pasta, but either way I'm making it again. 👀

One thing grief taught me is that sometimes you don’t go back to being the person you were before.

And honestly… that isn’t always a bad thing.

After losing my mom, I slowly realized my body was carrying stress differently. Loud environments overwhelmed me faster, my nervous system stayed on high alert, and even rest didn’t always feel restful anymore.

So I started paying attention to the small things that helped support me while I adjusted to a world that no longer had her in it.

Herbal teas became one of those things for me ☕💚

Not in a magical “everything is fixed” way.
Just gentle support for my body while I coped, grieved, and slowly learned how to move through life differently.

Reposting the day my indoor garden first arrived 🌿✨

At the time, I just thought it would be a fun way to grow a few herbs indoors.

Now it’s become one of my favorite parts of my routine.

Being able to harvest fresh kale, basil, dill, arugula, and other greens right in my apartment has made cooking feel more connected and a lot more fun.

There’s something really satisfying about planting a seed, watching it grow, and then turning it into dinner.

Honestly, it’s helped me slow down and brought a little more life into my home.

Seriously? Why is it this cold in May? Well my solution is I'm bout to make something warm and a little spicy ❄️🍲

This tteokbokki stew has become one of my favorite comfort meals when the temperature drops.

Chewy rice cakes, plant-based beef crumbles, mushrooms, squash, carrots, green beans, and kale from my indoor garden — all simmered in a creamy curry broth with just enough heat to warm you up body and lift your spirits. 🌿✨

So while mother nature makes up her mind what season she wants to be, I'ma be cozy over here with my bowl of deliciousness 👀😋

ok so oyster mushrooms?? If you haven't tried them yet, this recipe right here turned out so good I had to share.🍄🍜

I was in my kitchen with some Fontina cheese from another dish and I was like, what can I make with this... and 10 mins later I
kept going back for “one more bite” like 5 times while I was cooking lol ( I have to taste test... 😅)

Okay I think the keyword of this whole reel is… delicious 😂

I said it a lot because honestly… it just was.

I tried a THC-infused olive oil on some ravioli stuffed with goat cheese and pepper sauce, and it added this really earthy depth that surprised me in a great way.

I also added plant-based beef crumbles seasoned with dill and other spices, and the whole thing just came together with so much happiness in my mouth and 🤣

The olive oil has a really grounding, earthy flavor — and it actually pairs really well with stronger ingredients like goat cheese, feta, or even roasted mushrooms. I feel like baked mushrooms with it would be 🔥👀

Overall… easy to make, big flavor, and yeah… delicious 😌😂
