We're getting ready for The Straight and Narrow bar tomorrow, Friday, night from 5-8pm! We'll have all your favorites plus our new Meatball Sub and Tiramisu Truffles.

We can't wait to see y'all there!

🇺🇸🍝 It's official... Papa Pasta is headed to Fort Knox to serve our fellow veterans and military families! 🍝🇺🇸

Today we passed our inspection with Environmental Health Services for Fort Knox! We weren't quite able to get everything wrapped up in time for lunch service today, but with this inspection behind us and a
the last of the paperwork finished on base, we'll officially be added to the July food truck calendar!

Now we need your help!

If you live, work, or visit Fort Knox, do you stop by the food trucks? What's your favorite location to catch them? The PX? The Exchange Mini Mall? We've also heard trucks set up near Keyes Park and around the barracks during certain events. We're excited to explore it all!

Most of our customers so far have come from Elizabethtown, Radcliff, Vine Grove, and even Brandenburg, so we're hoping our amazing customers can help spread the word that fresh homemade pasta is coming through the gates soon. ❤️

It's a beautiful night out at the Hardin County Farmers' Market. The clouds are keeping the heat at bay and no rain on the forecast til 4am. Have some dinner with Papa Pasta and a full lineup of food truck friends!!

We still have plenty of Meatball subs and Tiramisu Truffles and a few servings of Fettuccine alla Bolognese and plenty of the white sauces, too. Bring the family and come have a plate!

Got started changing the dates and everything and then the computer graphics card decided to be a brick... All fixed now though!

This week we have two confirmed spots to serve and one more we hope to be able to do Wednesday but it won't be confirmed til that morning after our inspection. But we do have permission to set up at Ft. Knox PX if all goes as expected - fridges working properly, they like the plumbing set up, hood vent happy, menu and shopping locations approved... All the things. Short of an unexpected breakdown - we should be there. Gotta make up for things that do break after all.. silly computers.

Anyways: the solid slots are Hardin County Farmers' Market Tuesday from 5-8 (then hopefully Ft Knox PX Wednesday but we don't know exactly what time... late lunch to dinner? 🤷🏽‍♀️ Depends on the inspection and time to set up and cook after.) and The Straight and Narrow on Friday from 5-8 also!

Meatball Subs and Tiramisu Truffles will be back on the menu again, they seem to be a hit but we would love to hear what You think... so come and try them out and let me know!! We can't wait to serve you all!

With Thea at the window, Meatball Subs AND Homemade Tiramisu Truffles on the menu - from the cheese to the cookie and the fresh ground espresso beans 😉 - we know it's going to be a great night!

So... we had a thought.

What if we took homemade mascarpone, homemade ladyfinger cookies, added fresh espresso - with fresh ground beans of course, because at that point... why wouldn't you... and instead of layering it into a traditional tiramisu... we rolled it into a bite-sized treat?

Well, we did. 😍

Introducing our new Tiramisu Truffles! All the flavors of a classic tiramisu packed into perfectly pop-able bites.

Fair warning: stopping at one may not be possible. 😬 So it's a good thing they will be added to our menu in packs of 4 or a dozen. 😉

Our very first Meatball Sub heading out the window! 🥖🍝

When we first started planning these, the idea was a generous pile of Parmigiano Reggiano on top. Then reality reminded us that Parmigiano Reggiano is currently about $18 a pound. 😂

A delicious sub? Absolutely. A $20 sub? Also absolutely.

So we made a small change and honestly, we're glad we did! Each Meatball Sub is finished with a sprinkle of Parmigiano Reggiano and topped with a melty layer of mozzarella for all that rich flavor without turning it into a special occasion purchase.

The result is a hearty, cheesy, comfort-food kind of sandwich for just $14. For those who tried it: let us know what you thought!!

Last night was one of those nights where we opened the window and barely slowed down. We sold through all of our prepared red sauces by 7:00 and even had a few folks stop by just after we closed.

Thank you to everyone who came out, had a bowl of pasta or tried something new and helped make the launch of our Meatball Subs such a success! ❤️🍝
