- 2 (8oz) packages cream cheese, softened
- 1 (20oz) can crushed pineapple, drained
- 1 cup powdered sugar
- 1 (8oz) tub Cool Whip
- 1 graham cracker crust

1 package cream cheese, 8 ounces, softened
1 cup chopped pecans
1 box yellow cake mix, 15.25 ounces
1/2 cup unsalted butter, melted
1 cup shredded coconut, optional
1 teaspoon vanilla extract
1/2 cup powdered sugar, for dusting

Nobody warned me that baking this would make me feel like a professional pastry chef. I was not prepared for that.
The color alone felt like a win before it even went in the oven. Deep, dark, that rich jewel purple that makes you lean in and look twice. But then it came out velvet crumb, smooth frosting, layers that actually held and I just stood in my kitchen feeling unreasonably proud of myself.
This is not a complicated cake. It just looks and tastes like it is. Bold blackberry woven all the way through the batter, a frosting that's smooth enough to feel like it came from somewhere expensive, and that crumb soft and dense at the same time in a way that shouldn't make sense but absolutely does.
My neighbor came over, ate a slice, and asked what bakery I'd ordered it from. I let her finish the whole piece before I told her.
Serve it cold. Watch the table react. Take the compliment.
