I love salads, but sometimes they need a bit of tweaking to make them more appealing. The salad ingredients are the usual for a classic salad, except for the mint. I loved this addition. I have been making this cake for over 35 years. Of course, it was a full-sized cake back in the day. To have the flavors converted to a 4-inch cake was so exciting. I like how the vanilla and chocolate flavors balance out each other. Using whipped cream instead of frosting allows the cake to be just right in terms of sweetness.
