It was cupcake week around here - surprise birthday cupcakes for a friend! Ultra Vanilla Cupcakes - I had some leftover buttermilk and a splash of cream that I used in place of the dairy. These came together quick and were ready to go in an hour!

Baked Apple Cider Donuts. Feeling like fall around here and the donut/doughnut pans were on sale. So, here we are. The crunch of the cinnamon sugar and the softness of the dough is a fantastic balance. Happy fall baking! - fantastic recipe!

Lemon meringue tart. Tried and true. Sweet and tart. One of my favorites.

Second post - I had to share the crumb. Look at those air pockets! Previous post was just out of the oven. 🤣🥐

Guys - I did it. I’ve attempted croissants maybe 2 other times at home and this was the batch. Thanks to and for a very detailed recipe.

Fraisier - French strawberry cake. Fresh strawberries, génoise sponge, strawberry syrup, and a diplomat cream assembled in layers. This recipe isn’t as sweet as I had hoped… I’d make it again with a richer diplomat cream. Still tasty!

Happy PRIDE meringues. I made so much lemon curd and pastry cream, that this seemed like the most logical thing to do with all those egg whites! Local peeps - let me know if you’d like some… they don’t last long and I have plenty to go around. 🤣

Graduation season is here and I’ve made a few things this weekend to help families celebrate! Gluten free cheesecake-marbled brownies, gluten free lemon meringue bars (a repeat from a few posts back), and mini French fruit tarts (not gluten free). Other items, not pictured, are the confetti cookies and blueberry sour cream muffins! Congrats, Class of ‘22!

We had too many apples and I was craving apple pie… but this is fun too. Apple hand pies! The raw sugar on the outside is a lovely crunch, and the pre-cooked filling was the perfect amount of sweetness. Happy Memorial Day!

Confetti cookies via - made these (to go with the lemon bars) for a birthday celebration. Everything about these makes me smile. The bright colors, the crunchy nonpareils, and the subtle almond flavor.
