🏔️ An Alaskan Adventure in Downtown Phoenix! 🏔️
What an absolutely incrEDible First Friday! We spent our evening exploring the brand-new Molly of Denali: An Alaskan Adventure exhibit at the Heard Museum in Downtown Phoenix, and it is a total must-visit for families!
From the second we arrived we were totally immersed in the culture, science, and daily life of Alaska. We explored the Tribal Hall, learned all about traditional Alaska Native Regalia and traditional drums, and even ran the counter at the Denali Trading Post!
The hands-on activities are amazing. We strapped on snowshoes to tackle "The Most Amazing Maze Ever!", checked out the ice fishing shack, and learned about the salmon life cycle and traditional fish camps. I even got to test out a Polaris Indy 600 snowmobile, while Mickey and Emma took over the controls of a bush plane simulator! ✈️❄️
The absolute highlight of our night was getting to meet and learn from Tlingit artist James Johnson. Hearing him speak about his heritage, seeing his magnificent woodcarving process up close, and understanding the deep history behind his craft was a truly powerful educational experience for all of us.

It turns out that teaching a league of mini-superheroes how to chop, stir, and slurp is a SOUPER power all on its own. There were no villains in sight, just a lot of incrEDible KIDchen sidekicks making some seriously heroic flavors. Honestly, the results were nothing short of marvel-ous.

One week ago today, we didn't just celebrate a major milestone—we looked back at 15 incrEDible years of building a life, a family, and a beautiful journey together.

Holy wonton, Batman! Get ready to have your mind blown because on this week’s all-new episode of Edible Ed's, I am serving up Edible Ed's Notcho Average Crab Rangoon Nachos! 🔥
I took everything you love about a classic crab rangoon, gave it a serious upgrade, and served it up nacho-style. Instead of just using chips, I actually stuffed the wontons with the creamy crab filling before frying them up and layering them into the ultimate nacho pile! Then I loaded them down with a sweet chili drizzle, spicy Yum Yum sauce, green onions, sesame seeds, and just enough pickled jalapeño to keep things interesting.
It’s dynamic, it’s crunchy, and it is absolutely notcho average snack. 😤

The amazing Mickey Munchies treated me to a Happy Hump Day Brekkie, and I’m still thinking about it. 🤩 Let's just say, she didn't chili-around on the flavor.
That homemade red sauce? Absolutely guac-tastic! It had that slow-burn heat that makes you appreciate every bite. Of course, the Los Altos Queso y Crema y the Avocados from Mexico took it from ‘delish’ to ‘holy-mole!’

This is a fresh batch of my Guyanese Green Seasoning. It’s a labor of love blended from rosemary, cilantro, parsley, thyme, green onion, onion, garlic, oil, and a generous shake of my Magic Dust. I make it in massive batches, freeze 'em, bag 'em, and pull them out whenever a dish needs soul. It is the absolute bedrock of every great Guyanese dish, especially a comforting, slow-simmered curry. 😍
But as I was holding this frozen block today, it hit me: Life works the exact same way.
We all want the final masterpiece. We want the rich flavor, the warmth, the celebration at the dinner table. But you can't get the depth of the curry without the quiet, cold prep work of the foundation. 🚧
Sometimes, life asks us to do the heavy lifting in seasons where nobody is watching. We blend our hard work, our sacrifices, our patience, and our love into these quiet blocks of character. Looking at this bowl of Edible Ed's Rigatoni Balboa & The Heavyweight Meatballs and honestly? It’s a pasta-tively perfect dinner situation. 🍝
I like big meatballs and I cannot lie—especially when they’re hanging out with perfectly sauced ridges and a serious blizzard of fresh parmesan. But the real secret weapon in this bowl? I swapped out traditional ricotta for Los Altos Requesón. That substitution gives it an unbelievably rich, creamy mouthfeel that takes the whole dish to a completely different level. 🤤🇲🇽🇮🇹

Every single night, I count my blessings for four things that might seem contradictions to some, but are everything to me: my joy, my pain, my happiness, and my sorrow. 🎨✨
I painted this piece as a reminder that we aren't just one emotion. We are a beautiful, complex mosaic of all of them. For a long time, I worked purely in lines and ink, but this was the very first piece I ever painted in color. I hung it right next to my bed so it’s the first thing I see when I wake up and the last thing I see before I sleep—a daily reminder of exactly who I am and what I am made of.
Understanding and deeply appreciating these psychological states is what allows me to be empathetic and truly human to the world around me. But more importantly, it taught me how to be gentle with myself. I’ve learned that I cannot truly show love to others if I don’t first learn to love myself—the light, the dark, and everything in between.
Every emotion has a purpose. Every shadow makes the light worth chasing. I'm grateful for the full spectrum of life that I'm livin'. I love you. ❤️
