These Double Chocolate Zucchini Muffins are so moist & chocolatey. I try never to be that person who makes a health food and says “ooo it tastes like cake!!!” when it is actually not cake at all!! But THIS recipe - seriously I may even do a cake version. PACKED with amazing things like coconut oil, greek yogurt, a whole zucchini & honey. And chocolate, of course chocolate. Healthy and tastes amazing.
INGREDIENTS
1 1/4 cup all purpose flour spooned & leveled
1/3 cup cocoa powder spooned & leveled
1 tsp baking powder
1 tsp baking soda
1/4 tsp kosher salt
1/2 cup coconut oil melted
1/2 cup honey
1 large egg room temperature
1/2 cup greek yogurt room temperature
1 1/2 cup zucchini grated on small side of box cutter
3/4 cup chocolate chunks or chips

Chicken Cutlet Arugula Caesar wrap - ohhhh boy does this hit the SPOT. Why is a chicken Caesar wrap just so damn good?! This one is made with my Italian style chicken cutlets but yes you can use any chicken you want. I love arugula but you can use a kale if that’s your thing.
INGREDIENTS:
Chicken Caesar Wraps
6 Italian style chicken cutlets*
5 oz arugula or baby arugula
1/3-1/2 cup caesar dressing
burrito sized wraps
8 oz parmigiano reggiano a wedge, grated or shredded (wedge preferred)
Chicken Cutlets
1.5 lbs chicken breast or thin sliced
1/2 cup avocado oil
2 lg eggs
kosher salt
3/4 cup italian style breadcrunbs
1/2 cup pecorino romano or parmigiano reggiano
Homemade Caesar Dressing
2 small garlic cloves finely minced or grated
2 anchovy filets
2-3 tbsp fresh lemon juice 1 large juicy lemon
1 cup mayo I like Hellman’s or Kewpie
kosher salt
1/4 tsp+ freshly ground black pepper
3-4 dashes Worcestershire sauce
1/2 cup freshly grated Parmigiano-Reggiano
