CSA share # 18. Did you know you can freeze tomatoes whole? Super easy way to preserve the harvest for winter use.

Labor Day and CSA share # 17 sees the continued resurgence of kale - hooray - and a second and final wind of tomatoes from the hoop tunnel. Being an organic vegetable farmer it's always hard to make the decision to get 'take out' when we have all this glorious produce at our disposal, and we rarely do. Last Friday was no exception after a busy week and prolonged push to get irrigation on some thirsty crops. As we rounded the dinner time hour and finished the day by laying re-used drip tape on fall brassica beds, my mind drifted to getting 'take out' for our family's Friday night meal. But looking at the gorgeous curly kale in the field inspired an easy and quick meal instead. I ended up sautéing chopped red onions for a few minutes, added a hefty amount of chopped curly kale, a jar of kalamata olives, and salt and pepper. Meanwhile a pot of penne pasta cooked and in not too long we mixed the two pots together, sprinkled some cheddar cheese on and had a meal that was unrivaled by 'take out'. Anyways, a story of labor and food to begin a holiday week.
