Easy breakfast, lunch or dinner for a group! Lightly whisk 6 eggs, add 1-16 oz. bag frozen spinach (Trader Joe's is the best! No need to thaw), 24 oz. marinated artichokes with their juice, and 24. oz roasted red pepper, drained. Fold in 1 cup bread crumbs and 4 cups shredded cheese. Salt and Pepper to taste. Place in two 9x13 baking dishes (9 squares per pan, don't have enough guests? Freeze a pan). Bake in 325 degree oven for 45-50 minutes. Your kitchen will smell sooo good!

4 grocery stores later and I finally have all I need for tonight's private dinner! Why can't we have markets where everything is in the same place? Guess I'll have to cook in another country!

Tomato, Zucchini, Squash and Feta. Slice and layer. Sprinkle with Green Onion, Feta and Black Pepper. Drizzle with Olive Oil. Bake at 400 degrees 25-30 minutes. Perfect for summer!
