Chicken Pepperoni Pizza Melts
π Ingredients (makes ~4 sandwiches)
For the Filling:
2 cups cooked chicken, shredded or diced
1 cup pizza sauce
1β1Β½ cups shredded mozzarella cheese
Β½ cup sliced pepperoni (or mini pepperoni)
1 tsp Italian seasoning
Salt & black pepper, to taste
For the Sandwiches:
8 slices bread (Italian, sourdough, or your choice)
2β3 tbsp butter or olive oil (for grilling)
Optional: grated Parmesan, red pepper flakes, fresh basil
π©βπ³ How to Make It
1. Mix the Pizza Filling
In a bowl, combine cooked chicken, pizza sauce, shredded mozzarella, pepperoni, Italian seasoning, salt, and pepper.
Stir until well mixed.
2. Assemble the Melts
Butter one side of each bread slice.
Heat a skillet over medium heat.
Place a slice of bread butter-side down in the skillet.
Spoon a generous layer of the chicken pepperoni pizza filling onto the bread.
Top with extra cheese if desired.
Place a second slice of bread butter-side up on top.
3. Grill
Cook 3β4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted throughout.
4. Serve
Slice sandwiches in half.
Sprinkle with Parmesan, red pepper flakes, or fresh basil if you like.

French Onion Chicken
π Ingredients (serves ~4)
For the Chicken & Onions:
4 boneless, skinless chicken breasts
Salt & freshly ground black pepper
1β2 tbsp olive oil or butter
2 large onions, thinly sliced
2β3 cloves garlic, minced
1 tsp dried thyme (or 1 tbsp fresh)
Β½ tsp smoked paprika (optional)
For the Sauce:
1 cup chicken broth
Β½ cup beef broth (optional β adds depth)
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
For the Topping:
Β½β1 cup shredded Swiss or GruyΓ¨re cheese
Optional: fresh parsley or thyme for garnish

1. Brown the Chicken
Season both sides of chicken breasts with salt and pepper.
Heat olive oil or butter in a large skillet over medium-high heat.
Add chicken and sear 4β5 minutes per side, until golden and almost cooked through.
Remove chicken and set aside.
2. Caramelize the Onions
In the same skillet, add a bit more oil or butter if needed.

1 small onion, chopped
2β3 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
Salt & black pepper, to taste
1 can (15 oz / ~425 g) diced tomatoes (optional)
1 can (15 oz / ~425 g) tomato sauce
2 cups beef broth (or water + bouillon)
2 cups dry macaroni or elbow pasta
1β1Β½ cups shredded cheese (cheddar, Monterey Jack, or blend)
Optional toppings: sour cream, sliced green onions, jalapeΓ±os

1. Brown the Beef
Heat a large pot or skillet over medium heat.
Add ground beef and chopped onion; cook 5β7 minutes, breaking up the meat, until browned and the onion is soft.

2. Add Liquids & Pasta

Garlic Butter Steak & Potatoes

Steak & Potatoes:
1Β½β2 lb (680β900 g) steak (sirloin, ribeye, or your favorite), cut into bite-size pieces
1Β½β2 lb (680β900 g) baby potatoes or small Yukon Gold potatoes, halved
2β3 tbsp olive oil
1 tsp garlic powder
1 tsp paprika (optional)
Salt & freshly ground black pepper, to taste
Garlic Butter Sauce:
4 tbsp unsalted butter
4β5 cloves garlic, minced
Optional: a squeeze of lemon juice
Optional garnish: chopped fresh parsley

1. Cook the Potatoes
Heat 1β2 tbsp olive oil in a large skillet over medium heat.
Add the halved potatoes and season with salt, pepper, garlic powder, and paprika (if using).

Remove potatoes from the skillet and set aside.
2. Cook the Steak

1β2 tbsp olive oil
1 small onion, finely chopped
3β4 cloves garlic, minced
1 (24β28 oz / ~680β790 g) jar marinara or pizza sauce
1 tsp dried Italian seasoning
Β½ tsp dried basil
Β½ tsp dried oregano
Salt & black pepper, to taste
2β3 cups shredded mozzarella cheese
Β½ cup grated Parmesan cheese
Optional toppings: pepperoni slices, sliced olives, chopped fresh basil

1. Prep
Preheat oven to 375Β°F (190Β°C).
Lightly grease a 9Γ13-inch baking dish.
2. Cook the Ravioli
If using frozen ravioli, cook according to package directions until just al dente.
Drain and set aside.

Heat olive oil in a skillet over medium heat.
Add chopped onion and cook 3β4 minutes until softened.

For Baking:
Cooking spray or a light drizzle of olive oil

8 oz (225 g) shrimp, peeled & deveined
8 oz (225 g) steak (sirloin, ribeye, or strip), cut into bite-size pieces
1 tbsp olive oil or butter
1β2 tsp Cajun or Creole seasoning
Salt & pepper, to taste
Cheesy Topping:
1Β½β2 cups shredded cheese (cheddar, Monterey Jack, or blend)
Sauce & Garnish:
ΒΌ cup sour cream or ranch dressing
2β3 green onions, sliced

3 cups mashed potatoes (fresh or leftover)
1 large egg

For the Meat Filling or Mix-In:
1 cup cooked ground meat (beef, sausage, or turkey)
1 small onion, finely chopped
1β2 cloves garlic, minced
Salt & pepper, to taste
Optional seasonings: paprika, Italian seasoning
For Frying:
2β3 tbsp vegetable oil or butter
Optional Toppings:
Sour cream
Chopped green onions or chives
Shredded cheese

Garlic Butter Steak & Potatoes
Ingredients
1Β½ lbs sirloin steak, cut into 1-inch cubes
1 lb Yukon Gold potatoes, diced Β½-inch
4 tbsp unsalted butter, divided
1 tbsp olive oil
4 cloves garlic, minced
1 tsp dried rosemary
1 tsp dried oregano
Β½ tsp kosher salt
Β½ tsp black pepper
Fresh parsley, chopped (garnish)
Instructions
Heat skillet over medium-high. Add 1 tbsp oil + 2 tbsp butter.
Add potatoes, garlic, rosemary, oregano, salt, pepper. Cook 7-8 min undisturbed, then stir 3-4 min until fork-tender. Remove to plate.
Increase heat to high. Add 2 tbsp butter. Sear steak 1 min undisturbed, toss 1-2 min until desired doneness.
Return potatoes to skillet. Toss together. Garnish with parsley.
