I got my wish I visited the CIA! Culinary institute of America, in Hyde Park NY not the one in DC. Lol!
As a guest of the NY Seafood Summit. Met CIA staff Chef Mattel and Chris Muller. Ken Baker from Rethink Food brings awareness of food insecurity in New York. Ken B is everywhere! Such a beautiful campus seeing the young future chefs at work.

I visited my cousin Vince in Foxboro, Mass and setup a small WokMon on his 2" burner. He now has Wok Hei and new patina on his wok! Some simple Bok Choy w/Chinese sausage and Tomatoes n Eggs dishes. We chowed down watching the Olympics events. Lol

Attended the Restaurant show at the Javits convention center. WokMon is looking at the next Big thing!
The industry is moving towards coffee and packaging for delivery (Uber). Hardly any veggie burgers booths ( impossible burgers) guess they sort of saturated the market. Sriracha wars are game on! Automation vending is coming. Pizza on demand, soft serve ice cream, cotton candy to robots to name a few. That's the 2024 update.
