Caramel Apple Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup peeled, finely chopped apples
- 1/2 cup caramel sauce, plus extra for drizzling
Directions:
1. Preheat oven to 350Β°F (175Β°C) and line a 12-cup muffin tin with cupcake liners.
2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
3. In a large bowl, cream butter and sugar together until light and fluffy.
4. Beat in eggs one at a time, then add vanilla extract and mix well.
5. Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
6. Fold in chopped apples gently.
7. Divide batter evenly among cupcake liners, filling each about two-thirds full.
8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
9. Let cupcakes cool completely on a wire rack.
10. Once cooled, frost with caramel sauce or your choice of frosting and drizzle additional caramel sauce on top.

Tips:
Use tart apples like Granny Smith for a nice balance to the sweet caramel flavor.
Warm the caramel sauce slightly before drizzling to achieve a smooth, glossy finish.

Old Fashioned Butter Cake - 100 year old recipe!
2 cups all-purpose flour, sifted
1 1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter, softened
1 cup milk
1 teaspoon vanilla extract
2 eggs
Preheat oven to 350*F. Grease and flour two 8 inch x 2 inch baking pans and set aside.
In a large mixing bowl sift together the flour, sugar, baking powder and salt.
Add butter, milk, and vanilla. With a hand mixer, beat for 2 minutes, occasionally scraping down the sides of the bowl.
Add eggs and beat for 2 minutes more.
Pour batter into prepared pans, dividing equally between the pans. Bake 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven.
Cool in the pans for 10 minutes and then turn cakes out onto a cooling rack to cool completely.
Frost with your favorite frosting. I used my favorite chocolate frosting, the one on the back of the Hersey's cocoa can.
"Perfectly Chocolate" Chocolate Frosting
1 stick (1/2 cup) butter or margarine
2/3 cup Hershey's cocoa
3 cups powdered sugar (confectioners' sugar)
1/3 cup milk (plus an additional few drops to make a nice consistency)
1 teaspoon vanilla
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk if needed. Stir in vanilla. About 2 cups frosting.

π§ Cinnamon Sugar French Toast Muffins π§
Ingredients
For the Muffins:
1Β½ cups all-purpose flour
Β½ cup granulated sugar
1 tablespoon baking powder
Β½ teaspoon fine salt
1 teaspoon ground cinnamon
Β½ teaspoon ground nutmeg
1 cup whole milk (or any milk of your choice)
2 large eggs
ΒΌ cup unsalted butter, melted (plus extra for brushing)
1 teaspoon pure vanilla extract
For Coating:
Β½ cup cinnamon sugar (mix ΒΌ cup granulated sugar with 1β2 teaspoons ground cinnamon)
Instructions
Preheat and Prepare: Preheat your oven to 375Β°F (190Β°C). Line a muffin tin with paper liners or lightly grease it to prevent sticking.
Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth and well blended.
Form the Batter: Pour the wet ingredients into the bowl of dry ingredients. Gently stir until just combinedβdo not overmix, as this can make the muffins dense. A few lumps are perfectly fine.
Fill the Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about β
full.
Bake the Muffins: Bake in the preheated oven for 15β18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Prepare the Coating: While the muffins bake, prepare the cinnamon sugar by mixing the granulated sugar and ground cinnamon in a small bowl.
Coat the Muffins: Once the muffins are done, let them cool slightly (just enough to handle). Brush the tops of each muffin lightly with melted butter, then roll them in the cinnamon sugar to coat evenly.
Serve and Enjoy: Serve the muffins warm for the best flavor and texture. Pair them with a hot cup of coffee or tea for an extra cozy experience.

πͺ Maple Cookies with Maple Icing π
Ingredients
For the Cookies:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup pure maple syrup
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
For the Maple Icing:
1 cup powdered sugar
2 tablespoons pure maple syrup
1-2 tablespoons milk (adjust for desired consistency)
Instructions
Preheat and Prepare: Preheat your oven to 350Β°F (175Β°C). Line baking sheets with parchment paper or silicone baking mats.
Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
Incorporate Wet Ingredients: Add the maple syrup, egg, and vanilla extract to the butter mixture. Beat until smooth and fully combined.
Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms.
Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set. Avoid overbaking to keep the cookies soft.
Cool: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Prepare the Icing: In a small bowl, whisk together the powdered sugar, maple syrup, and milk until smooth. Adjust the consistency by adding more milk (for a thinner glaze) or powdered sugar (for a thicker icing).
Decorate: Once the cookies are completely cool, drizzle or spread the maple icing over the tops. Allow the icing to set before serving or storing.
