โจ Easy Lemon Artichoke & Green Olive Capellini โจ
Combining two of my favorite spring recipes! My easy lemon artichoke capellini and my green olive capellini with toasted lemon garlic panko breadcrumbs ๐๐ซ๐

Ingredients:
- Lemon Artichoke & Green Olive Capellini:
- 1/2 lb. capellini
- 2 tbsp. extra virgin olive oil
- 4 garlic cloves, minced
- 1/3 cup green olives, halved and chopped (preferably - - Cerignola or Castelvetrano)
- 14 oz. small baby artichokes, halved or quartered
- 1/2 tsp. crushed red chili flakes
- 1/4 cup white wine
- 2 tbsp. butter
- Juice of 1-2 lemons
- 1/2 cup Parmigiano Reggiano, finely grated
- 1/4 cup Italian parsley, finely chopped
- 1/3 cup lemon-garlic panko breadcrumbs
- Pasta water as needed
Lemon-Garlic Panko Breadcrumbs:
- 1/2 cup plain panko breadcrumbs
- 2 tbsp. extra virgin olive oil
- 1 garlic clove, minced
- Juice of 1/2 lemon
- 1/4 tsp. salt
๐ฑ Creamy Ramp Pesto Gnocchetti๐ฑ
Thereโs no season like ramp season! Iโm making my creamy ramp pesto for ramp season and itโs so easy - just blend pine nuts, ramps, Parmigiano, Fiori Sardo, olive oil, lemon juice and salt and toss with your favorite pasta!

Ingredients:
- 1/2 lb. gnocchetti
- 2 bunches of fresh ramps, cleaned and coarsely chopped
- 1/4 cup pine nuts
- 1/3 cup Parmigiano Reggiano, grated
- 1/3 cup Pecorino Fiore Sardo, grated
- 1 tsp. salt
- Juice of 1/2 lemon
- 1/4 cup extra virgin olive oil, plus more as needed
- Pasta water as needed

๐ฑ Basil Butter Anelli with Fresh Mozzarella ๐ฑ
Anelli pasta tossed in an easy basil butter sauce topped with fresh mozzarella & Parmigiano!

Ingredients:
- 1/2 lb. anelli pasta
- 2 sticks salted butter, softened
- 1 cup basil, loosely packed
- 1 garlic clove, grated
- Zest of 1 lemon
- 1/3 cup Parmigiano Reggiano, finely grated
- 1/2 cup fresh mozzarella, cubed
- Pasta water as needed
- Salt to taste
Note: This makes more basil butter than you need. Save the extra to use throughout the week!
๐ Whipped Robiola & Lemon Butter Agnolotti ๐
Agnolotti filled with whipped robiola & Parmigano and tossed in a lemon butter sauce topped with fresh chives - a spring fave!

- 1 cup โ00โ wheat flour
- 1/2 cup semolina flour
- 2 whole eggs
- 2 egg yolks
- 3.5 oz fresh robiola
- 1/3 cup Parmigiano Reggiano, grated
- Zest of 1 lemon
- 1/4 tsp. salt
- 6 tbsp. unsalted butter
- Juice of 1/2 lemon
- 1 tbsp. chives, finely chopped
๐ Roasted Cherry Tomato, Garlic & Whipped Ricotta Paccheri ๐
Paccheri pasta tossed in a roasted cherry tomato sauce with garlic, whipped ricotta, Parmigiano & fresh basil. An easy spring pasta dish! ๐

- 2 pints cherry tomatoes
- 1/2 cup garlic cloves, peeled
- 1/4 cup extra virgin olive oil
- Sea salt, to taste
- 1 cup whipped ricotta
- 1/2 cup Parmigiano Reggiano, grated
- Crushed red chili flakes
- Basil, for garnish
- Pasta water, as needed

Found this fun pasta shape from and decided to keep it light and simple with a lemon butter sauce with pink peppercorn, Parmigiano and parsley! ๐๐ผ

โจTrofie with Pistachio Pesto & Burrataโจ
Loving this pistachio pesto for spring! Itโs so easy to make - just throw all of the ingredients into a blender and you have the most flavorful pesto sauce. I love the addition of the basil, mint and lemon for extra fresh flavor ๐ฑ๐

- 1 cup roasted pistachios, shelled
- 1 garlic clove, minced
- 1/2 cup Parmigiano Reggiano, finely grated
- 1/2 tsp. salt
- 2 sprigs of mint
- 1/2 cup of of basil, loosely packed
- Juice of 1/2 lemon
- 1/4 cup extra virgin olive oil
- 4 oz. stracciatella or burrata cheese
