Well..........here i am again. thank you for your patronage......just a fancy word for purchasing our pies...but you know what i mean :)

i want to tell you a little more about our vacuum packed pies.....it all started because customers were interested in whether we could ship....so i did my homework and ran a couple of tests ( to friends in far away places ) and it was great !
however,.....i was surprised that local people where also interested in buying vacuum packed pies for there freezer, or in preparation for the holidays......so what do YOU think ?
from now on....at each market, there will be a small selection of Vacuum packed pies......and also i am thinking of doing a variety pack of 3-4 4inch quiches.

Hey everyone ...i am sorry that i haven't been more diligent with Facebook.
the truth is that we have been so busy baking that i just not been able to get to it!
as many of you know, we have been doing two markets this year. one in Chattanooga on Wednesdays..at the Memorial Hospital and the Farmers Market in Murphy N/C on Saturdays.....and it has really great seeing old friends and making new ones along the way....so i really apologize for neglecting this page.

i am excited to tell you that we have added Quiche Lorraine to our selection so now the list is as follows......

our everything Quiche....of course :)

vegetarian quiche

Broccoli ...Ham and Swiss

Jalapeno with Chorizo and Jack Cheese

Asparagus and Feta Cheese

and One of my favorites roasted tomato with Basil Pesto and Parmesan.

we continue to make our sweet pies too.

and we will soon start the seasonal pies for fall and thanksgiving.......

remember that you can always special a pie a week ahead when you see us at the market. we have had some requests for Gluten Free pies and Quiches and its not a problem....just let me know in advance....there will be a slight price increase for G/F ( because of the ingredients :)

Well.....here we are again, it Friday evening and we are in baking mode in preparation for the Murphy N/C Farmers Market tomorrow morning at the Old Train Depot.
Tomorrow will feature a great assortment of Quiches including Fresh Asparagus/ Feta and Broccoli ham and Swiss.
Also our Roasted Italian Tomato stuffed with Basil Pesto and shaved Parmesan.
Fruit pies include Apple and Blueberry, also pineapple/ Coconut and fresh Key Lime pie.
Oh....I almost forgot!
There are a limited number of our Seafood Quiches too.:)

Ok..........We are baking our hearts out in preparation for Chattanooga tomorrow...so Memorial here we come.
by the way.....we are sorry we have been away for a couple of weeks, we were on a road trip, but we are now back and looking forward to seeing our friends and customers again.
this week we will have the following Quiches................
EVERYTHING !.......... spinach,mushrooms, three cheeses,sweet peppers, bacon and
sausage.
VEGY...............
all the above without the meat :)
ROASTED ITALIAN TOMATO STUFFED WITH BASIL PESTO AND PARMESAN CHEESE..............
just what is says........it is one of my favorites....( i add a layer of sharp cheddar on the crust.
FRESH BROCCOLI,HAM AND SWISS.
FRESHLY STEAMED ASPARAGUS,
WITH FETA CHEESE AND CHIVES.
And the piece de resistance ( pardon my French :)
SEAFOOD QUICHE.
We don't make a lot of these simply because the ingredients are expensive but oh....it is good.
Crab, Crawfish and Shrimp.seasoned with Cajun seasonings and lemon juice. swiss cheese and chives.
the custard is infused with the seafood mix to give it a rich deep flavor.
well....thats it!
no pictures today because i don't have time , i will do better next time.
one last thing.....we are also back at the Murphy Market on Saturdays. at the Train Depot...come by and visit.

A busy day of baking as we get ready for the farmers market in Chattanooga tomorrow

Thursday oct 26.

This coming Saturday will be the last day for the farmers market for this year.
We have met so many great people and made some good friends along the way and I am so grateful for the experience.

Even though the weather does not look promising...(cold and rainy) we WILL be there along with all the other fine vendors and we plan to have a pot luck thank you for all.
Don't let the weather put you off!
Come and see us, give us a chance to say goodbye for this year.

I plan on baking the following pies.

KEY LIME.
APPLE.
APPLE RAISIN.
BLUEBERRY ALMOND
PUMPKIN.
CHERRY.
MINCEMEAT
We will have the following QUICHES.

VEGY.
EVERYTHING.
ROASTED CAULIFLOWER /MUSHROOM/FETA.
BROCCOLI/HAM/SWISS.

Here in " my neck of the woods" we are preparing for a very busy day at the farmers market tomorrow :)

All the vendors will be there until 4pm instead of the usual 1 pm.

For us.....it has been a very busy week! I have found some really nice Georgia Peaches so there will be more PEACH PIES.

APPLE PIES.

BLUEBERRY PIES.

(Don't forget to buy ice Cream before it runs out ).

QUICHES.

KEY LIME PIES.

there will also be a limited ASSORTMENT OF INDIVIDUAL FRUIT TARTS.

This is a Green Tomato Pie.

As most of you know, I am not that good at keeping up with Facebook....Sorry.....but this week I have had a little more to add :)

About the green tomato pie......Chuck brought me some green tomatoes so I went ahead and made it!

It looks great but a little more juicy than I would like.

Here are a list of ingredients so you be the judge..........

4 cups peeled, quartered and sliced green tomatoes. ( that was a pain :)
1 cup brown sugar.
1 lemon, grated and juiced.
5 tablespoons flour
2 tablespoons cornstarch.
I/2 teaspoon each of cinnamon and clove.

I am curious what the history is behind this pie. Anyone know?

I wanted to add something.......

Last week a customer asked for a Tomato pie. I assumed that she was asking for a quiche- like tart....no problem.

I have a recipe for one that is made with grilled italian tomatoes and basil pesto and since I have both in my garden
I am going to make it!

But......what I discovered is there is a Green tomato pie ( which I have never made ) and with a little research I discovered that it is considered a fruit pie and has a taste between a peach and apple.
I don't have any green tomatoes in the garden at the moment but I will put it on my list of to-do pies :)

Last year the new pie for me was Muscadine pie! It tasted great but so labour intensive that I decided it was too much work.

Oh my ! Finally found some peaches that liked.

These are from South Carolina and I bought them at the fruit stand in Peachtree N/C.:)

So......fresh Peach Pie at the Market tomorrow.

Blueberries are plentiful so...... Yes....blueberry Pie and also Blueberry with oatmeal/brown sugar crumble topping.

I also have Key Limes.

So......Key Lime pie......please add your own whipped cream.

I've got the house to myself.....the stereo is the way I like it and I'm listening to Mozart's Requiem and baking :)

All is good.

The rain has stopped ( yeah) and today should be a great day to visit the market.
Last week the local farmers brought some incredibly fresh Vegys.
The heirloom tomatoes that I bought were fantastic.

Today our pies will be........

and since I had an order for a gluten free quiche I went ahead and made two, so there is one extra!

Saturday the 10th of June.............

First :). Many thanks to all who came out and supported the Farmers Market last week.
It was an extra long day for us all but it gave us an opportunity to meet and great new people and welcome them to our community. A very good day !

Now......here is what I have for today.

VEGETARIAN QUICHES (everything as below but no meat :)

EVERYTHING QUICHES (sausage bacon mushrooms spinach sweet peppers three cheeses farm fresh eggs tomato and cream.

* come early as we tend to sell out pretty quickly. But remember......we can take orders for the following week.

One last note.....remember,all our fruit pies are made from scratch and with local farm ingredients. Always the best :)
I use King Arthur flour exclusively, and butter and real lard in my crusts.

Friday, December 9th.

Hi everyone :)

I have finally surfaced after a very busy time at thanksgiving and I would like to thank all the people that ordered pies for the holidays..........
And know it's on to Christmas!

But first....a very important event. Today I have the opportunity to spend time with the students at Murphy High School to talk about baking.
I am always excited to share my knowledge and experience with others, especially young people.
And of course......I can't go empty handed.
So up early this morning baking .

I have to smile to myself as I write this because I felt it necessary to put day month and year!

That's because it's been way too long since I posted anything on my Pie Guy page........
Well, here goes.....
I am back to baking after having a break due to health issues and I plan on being at the Farmers market this coming Saturday with the following pies.

APPLE CRANBERRY STREUSEL PIE.

PINEAPPLE COCONUT PIE.

OATMEAL CHOCOLATE PIE.
(This one is a big favorite because it is a lot like pecan pie, but no nuts!)

ASSORTED QUICHES.

and finally a lemon meringue pie for Flo, because I promised :)

I am really looking forward to seeing my old friends at the market.......it's been too long.

Today is pastry day on steroids! I have orders for tomorrow ( Friday) :)
Ok, pies this week will be as follows :
BLUEBERRY.
PEACH, yes.....Georgia peaches are finally showing up!
Maybe I will combine the two and do Blueberry/ peach together, it's a nice combination .
MIXED BERRY,
PINEAPPLE COCONUT, always a big hit.
PECAN CHOCOLATE CHIP.
There will also be the usual selection of Quiches too.

I also have some nice apples still so perhaps Apple Blueberry combo too.
Remember.....call and reserve a pie to be sure you get one before we sell out!

I have had someone ask for sort of before and after pics....well I have these if it helps.
Lemon pie before the meringue ..and after.
This is my favorite meringue pie!
The meringue is an italian meringue which is made by beating hot sugar syrup into the egg whites. This cooks the eggs as you beat them...I like this because it eliminates the "weepy" meringue that can sometimes occur.
The other pics are the cherry pie after the cut outs are done and then after it comes out of the oven

Well......another week and another Friday!
There were several people that placed orders at last weeks market which is the perfect way to make sure that you get a pie!
And....as it has turned out......we HAVE TOO take our granddaughter back home on SATURDAY. So......I have made the orders and contacted everyone ( thank god :) and we will deliver there pies today.
Bottom line.....we won't be at the market tommorrow!
I am sorry everyone, but.....I promise we will be there on sat the 25th. ( the next week )
I have orders for the week too.....but don't worry, I will be there.

Sitting here....taking a break. The last batch of quiches are in the oven and then it's off to the market.
I want to thank all those that have responded to my page.....some are old friends that I love dearly. A special thanks goes to Judy for her kind review :) I have made a few quiches for her over the years.
Living here in the North Carolina mountains is as close as I could get to my goal to live in Steamboat Springs
CO. but I think of my life there often.
