An award-winning and nationally acclaimed “truly Colorado” restaurant, The Fort specializes in regional game, such as bison, elk and quail, as well as seasonal fish and hearty vegetarian fare influenced by American Indian and Mountain Man cuisine.
The original recipe dates back to the 1830s at Bent’s Fort in southeastern Colorado. Fur traders, trappers, and voyageurs used to literally gather fresh hailstorms to chill their whiskey during hot summer days. The Hailstorm Julep is famously still made today here at restaurant in Morrison, Colorado. ⛈️

Join us Friday through Sunday for Fort Days of Summer, featuring live music, local artists - including Geri Arviso, Cheryl Arviso, Gary Monaco, Juan Lopez, and Wayne Beyale - a food truck serving mountain man burgers and brats, and the grand opening of our Whiskey Library. Some dishes carry history. Our Bison Bone Marrow is one of them — a nod to the deep culinary legacy that has always defined The Fort. Julia Child herself corresponded with our founder Sam Arnold and called this dish her favorite. Come taste the legacy.
