The pressure will forever drive me more than the attention.

The pressure of running successful places, perfect food, being different, giving an experience, never slowing down…. If I had said it once I have said it a million times Wafu Italian is and will continue to be the next big thing.

What started as a series of underground omakase dinners eventually became here in Montclair .. built around the idea of Wafu Italian Cuisine. But also reminded that dining should be fun and exciting.

Thank you and Bettina for recognizing the growing movement of Japanese-Italian cuisine across the country and sharing part of our story. Forever grateful for to be included in this national conversation around Wafu Italian cooking.

Biggest shoutout to and for hosting us . Cooking Wafu Italian with the legend himself, was a dream come true. Grateful for the flavors, the vibes, and the amazing people who made it possible. Here’s to always doing things differently and having a fu***ng blast wile doing it! Hits home even more that at the end of it all we were able to raise funds for .
