The unveiling of autumn in the Midwest welcomes all kinds of new flavors, ingredients and fall dishes to our kitchen.

As our farm partners celebrate the fall harvest and the days get shorter, our first concert series under the stars begins on Friday and a new dinner menu drops on Saturday at 5:30pm sharp.

Pictured is a sneak peek at one of our new dishes: The Habanada Shrimp. Grilled delicata squash, citrus, Habanada Chile, fresh herbs and more adorn the beautiful canvas of handmade ceramic dinnerware by Melissa Z Monroe Pottery.

We look forward to sharing the rest with you this weekend.
These are no ordinary dishes.

These are custom dinnerware pieces designed by Melissa Z Monroe Pottery to combine the palate of the chef with the artistry of the presentation to stand apart from the crowd.

Every member of our team knows this, and we are now hiring both part-time and full-time dishwashers/porters to care for and polish these pieces as they come in and out of the kitchen.

These gorgeous dishes by Melissa Z Monroe Pottery await a few more part-time Porters/Dishwashers to join our Woolly Bu**er restaurant team. Every Porter is responsible for protecting a staggering amount of artistic and business equity: our custom-made plates and serviceware.

What is a Porter?

A Porter/Dishwasher is responsible for the training of all new members of the Porter team. A Porter must not view his/her stations as dish ‘pits’ but as dish ‘palaces’.

Each plate, and each item that comes through the dish palace, is to be treated with the utmost respect. A Porter is fully expected to understand this and build a culture of that respect.

A Porter is the most important position in our kitchen. He/she controls the quality of our equipment, our plates, our wine glasses and everything else. If the Porter team is not doing their job correctly, our guests will taste that in their wine, and in the food, and they will see it in our kitchen.

Dish area maintenance will be of the utmost importance. More often than not, the dish area that is responsible for cleaning and sanitation, can be the dirtiest area in the kitchen. It will be the Porter’s job to ensure that the dish palace is the shiniest and cleanest area of the kitchen.

Join our Porter team by the end of June and earn a $500 sign-on bonus over your first three months.

Four of these bowls came from the discovered box of pottery and the bowl on the left has been in continuous use in my home for about 12 years (and also probably did two+ years of pop up dinners). Pottery can be amazingly durable if it doesn’t hit the floor or granite counter top.

I received a time capsule yesterday. A coffee shop I used to sell work through had closed and I never retrieved my work. Flash forward 12+ years (?!) and the shop has reopened in a new location and had this well packed box of pottery. I have to admit I was a little scared to see my old work. It’s not as bad as I thought and actually had a set of dishes from the first pop up supper clubs.

The end of the show with snow. It was so special to work with the Riverside art center. Everyone was so helpful and thoughtful about the arrangement of the pieces and truly interested in discussing the process and ideas behind my work. What a treat! I hope there are more shows like this in my future. @lizchilsen @riversideartscenter

You know that saying if it fits it sits? This pottery can hold some salmon. I jokingly call the center on my dishes “landing pads”. They need to be big enough for a portion and to hold the sauce to that center. Working on the right slope for this dish today. The details really matter.

Wrapping up my @wellyhaus vases this week. I hit my first supply chain snag. Looks looks like I’ll get my kiln elements “someday”. I feel lucky I got at least one kiln repaired before the wire ran out.
