Big Racks Barbecue
We are a competition BBQ team competing primarily in the KCBS Masters division.
Sponsored by: Heath Riles BBQ, Smokey Woods BBQ, The Good Charcoal Company, Springer Mountain Farms, ThermoWorks and Remote Tax Services.
Ever eat something so good for lunch that you decide to have the same thing for dinner?
Friends Ivan and Alfonso gave me some carnitas so a loaded taco was an easy decision. Heath Riles BBQ Simple Citrus and a half of a fresh lime is all these needed! Going back for round 2 later tonight.

Today is the day the polling booth opens for the open The Kansas City Barbeque Society open board seat. The board needs more cooks and there is only one good choice for this position - Vote Joe Osbrink who cooks under Never Easy BBQ.

Late post for our Facebook audience but I wanted to get it posted as it has been on Instagram a few days.
As pitmasters we cook a lot of BBQ and go through a lot of food ideas. Our friends/family always love it but there are few times where the pitmaster says - WOW. This was one of those cooks.
This was the first time we have cooked Picahna which has been gaining popularity and is now available at Walmart in our area. First time we have done a steak pinwheel and the first time we have used Anaheim peppers and large sweet peppers to make a brisket esquite popper. Love that Heath Riles BBQ brings out the best in many of us and helps us develop a creative itch many of us don't have. These are recipes that will be repeated in our house many times and I hope you chose to try them. Detailed recipes in the comments.

This weekend we made the trip back across the border to Hampton, IA for the Cruisin’ & BBQin’ in Hampton, IA KCBS sanctioned event.
This event drew teams from all across the country including teams coming from Canada, California, and Arizona. We were lucky to have some great neighbors and were spoiled by Rob from BIGG SMOAK BBQ who gave us a big bag of Cheezies, his hand-me-down Wags Backwoods BBQ biscuits and gravy, and provided shade during awards. We also were lucky to recieve 3 other breakfasts from Smokey D's BBQ, Man Meat BBQ, and J & K Smokin' BBQ. We hadn't been in the breakfast roulette before and it was good to fill up in the morning.
For the cook - chicken and pork remained hot but our brisket texture was a bit off and IA didn't like our flavor for ribs again this week. Results:
4th chicken 🐔 - Springer Mountain Farms
21st ribs
3rd pork 🐖- Compart Family Farms from Northern Fire Grilling & BBQ Supply
21st brisket
11th overall
Congrats to the Smokey D’s Wannabee’s for another GC and Dry to Da Bone on RGC.
We are off for a month but looking forward to MN Masters in Pierz, MN at the end of August.
