Simple Taco Beef Soup
I made a simple taco beef soup last night. This is the kind of recipe I rely on when I want something warm, but I really don't want to spend more than twenty minutes standing at the stove. It uses a lot of standard pantry staples, so it comes together pretty fast.
Ingredients:
1 lb ground beef
1 packet (1 oz) taco seasoning
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) whole kernel corn, drained
1 can (10 oz) diced tomatoes with green chilies
3 cups beef broth
Instructions:
Brown the ground beef in a large pot over medium heat, then drain off the excess fat. Stir in your taco seasoning, black beans, corn, diced tomatoes, and beef broth. Bring the pot to a low simmer and let it cook uncovered for 15 minutes so the flavors can come together.
Cooking tip: Rinsing your black beans thoroughly before adding them prevents the starchy canning liquid from making your soup base thick and murky.
Serving idea: We like to serve this in wide bowls over plain tortilla chips for a little crunch, along with a spoonful of sour cream.

Homemade Southern Cream Biscuits
I made these simple Southern-style biscuits with just self-rising flour and heavy cream. The dough comes together quickly, and the key is not to overmix it. They bake up soft inside with a golden buttery top.
Ingredients:
3/4 cup self-rising flour
1/2 cup heavy cream
2 tbsp melted butter
Steps: Preheat the oven to 500°F. Mix the flour and cream gently until a soft dough forms. Shape the biscuits, brush the tops with melted butter, and bake for 8–10 minutes until golden. Brush again with butter after baking and serve warm.
Tip:
For taller biscuits, don’t twist the cutter when cutting the dough. Press straight down so the layers can rise better.
