Sweet Potato Nacho Meal Prep: Ingredients: - 3 sweet potatoes, cut into coins - ½ can of corn - ½ can black beans - ½ cup shredded cheese - 1 lb ground chicken - 1 packet taco seasoning - ½ red onion, diced - ¼ cup chopped cilantro - 1 bell pepper - ½ cup plain Greek yogurt (for topping) Instructions: 1. Preheat oven to 400°F (200°C). 2. Cut sweet potatoes into coins and spray with avocado oil. Sprinkle with salt. 3. Bake sweet potatoes in the oven for 30 minutes, flipping halfway through. 4. While sweet potatoes are baking, cook ground chicken in a pan over medium heat with avocado oil. Season with taco seasoning and break apart to cook. 5. While ground chicken cooks, drain and rinse black beans and corn. 6. Dice bell pepper, onion, and cilantro, and set aside. 7. Once sweet potatoes are cooked, layer the bottom of four meal prep containers with sweet potatoes. 8. Divide cooked ground chicken mixture between dishes. 9. Top with cheese, corn, black beans, bell pepper, red onion, and cilantro. 10. Divide plain Greek yogurt into individual mini cups and place on top of sweet potato nachos. 11. Enjoy for 3-4 days in the fridge or freeze. Before eating, remove the Greek yogurt and heat up for about 1 minute.
