Operating as usual
We’ve been asked before if we can help with large orders and we’ve always said yes! When a local company came to us with a big number, we were nervous, but excited to see what we could do.
Over about three weeks we made 26 batches of caramel in addition to our normal production runs. This includes Lucy deciding she needed a new heating controller that shut us down for a couple days.
The 26 batches became about 12,000 individual sea salt caramels which were packaged into 412 gift boxes. Over the last 7 days we shipped 320 packages.
We are very appreciative that a company would trust us with such a large order. It helped us identify some inefficiencies in our systems and processes (and if you know Ben, you know systems and processes are important).
With some tweaks we know we’re capable of even larger orders. We love being able to know we can help with all gifting needs, from 1 to (big goal) 1,000 boxes!

In my (Ben) previous career, I learned something that distinguishes a job from a profession is training and certification.
When we bought the business I received a brief couple weeks of training with the previous owners. I knew I wanted more training so we could grow our business, bring new fun and exciting things to our customers, and have a deeper understanding of what I’m doing when I’m cooking confections.
I’ve completed a professional chocolatier course hosted by an internationally renowned school. Through extra research, experimentation, and determination, I even completed the distinction of graduating with Honors finishing the course with a 97% average.
I don’t often toot my own horn, but I’m proud of this step in my new-found career. This is the first course, but won’t be my last.
New Flavor Alert!!
We’re trying a new truffle today. This is a Blueberry Birthday Cake! We taste blueberry up front and a subtle birthday cake as the chocolate melts in your mouth.

We are very excited our new neighbors are up and running, MIX! Yet another amazing business in Uptown Marion District.
One of our favorite things about the businesses in Uptown is how hard the Marion Chamber of Commerce, the Economic Vitality Committee, and the Main Street office work to bring in complementary businesses. So many of the businesses in Uptown Marion truly support each other, refer customers to each other, and frequent each other’s businesses. We had no idea when we bought a business here that we would truly become a part of a large (sometimes a little nutty) family. We wouldn’t have it any other way.

Shipping is always active for many items on our website. It’s getting to be the time of year to remind everyone…..chocolate melts…mind blowing, we know!
While it’s typical Iowa weather here right now, the southern parts of the country are warming up. If you’re planning to ship some sweets check out the local extended forecast using your preferred weather outlet (we KCRG-TV9 First Alert Weather ). If the forecast has days in the mid 70s or higher you’ll want to add on our hot weather shipping packages. Once the chocolate is above about 75 for an extended period of time you’re encouraging sugar bloom (more on this in an upcoming video!!) or melting…neither of which are dangerous, just changes the appearance.
Our goal is to ensure every single confection that leaves our shop arrives to its final destination in the same condition it left our shop. Melted chocolate is sure going to taste great, it just isn’t as pretty and absolutely very messy.

UPDATE: This was an April Fools Day fun post, but based on the amount of people have stopped in and asked for some of these items, we are going to plan an “Eww, Gross” day for this summer. No details yet, but we’ll ask for input from you all and come up with some crazy options to try! **I have no plans to cover actual bugs/arachnids in chocolate. Our goal is to keep 100% of critters OUT of the shop!

Our final Easter reveal is also a life lesson: You’re not going to succeed every time you attempt something; but you can learn from every attempt to increase your rate of success.
We’ve had a lot of people ask about peanut butter eggs, so we’ve dedicated ourselves to making them. I’ve also seen this as a great opportunity for me to try our different decorating techniques to help gain experience for custom products.
Well…my white cocoa butter wasn’t tempered correctly when I was spraying the molds with my air brush…so some white stuck to the mold instead of releasing. BUT…two of the three trays I made did release much better, so we have some finished product! They do taste amazing no matter what they look like.
These are all milk chocolate with a peanut butter filling! They’re nice and smooth! Each batch will be a slightly different design as I try new techniques, so stop in if you like seeing what we’re coming up with! We’ll also share often on social media.
These are not available on the website, at least not yet. We want to ramp up our inventory a bit first before opening these up for shipping.
Easter chocolates are now available on our website! Solid shapes and "Three Chocolate" eggs are available for shipping. Due the fragility of the Jumbo Eggs we're unable to ship them (this year).

Just when you thought Uptown Marion District couldn’t get any better, we go and get a sushi joint moving from CR to the heart of Marion!!

Day 3 of Easter items are our solids. We have large bunnies, small bunnies, and crosses. We will have all of these in milk, white, and dark chocolates. The large bunnies are $6 and the smaller items are $3. These are more great items for Easter baskets, May Day baskets, or just a cute treat!
Construction update for the next couple weeks!
The big news is 10th street between 7th and 8th avenues is closing next Monday, March 28. The sidewalks aren’t impacted and businesses are still accessible.
On March 31st, weather dependent, East-bound 8th avenue from 10th street is closing for sanitary sewer work; this is expected to last 7-10 days.
The best way to stay up on all the construction, detours, temporary closings and impacts is to follow Uptown Marion District and Marion Chamber of Commerce social media sites.
Much like last year, businesses are open during all the construction and continue to serve our community with as few negative impacts as possible. The end state of these projects far outweigh the temporary challenges for what they’re bringing to Marion.
Please continue to be patient, flexible, and understanding as we all navigate the challenges. We are all going to come out better for this in the end, and we’re incredibly excited to see what this year brings!
Easter Release #2: Hollow Eggs with treats inside!
We are starting to stock up on these and have milk and dark chocolate eggs. We’ll have a couple varieties available to fill: Sea Salt Caramel, Assorted Caramels; Assorted Creams and Caramels; and truffles. Caramels and creams eggs have 10 chocolates inside, truffle eggs have 6 truffles. Either variety is $30 and wrapped in assorted foil!
These will be available on our website next week. These do take longer to build so the turn around may be a few days!
