I did a thing after work! 🇩🇴 🤤

I was getting nervous because I only had one cube of sazon (aka sofrito as most people call it) left in the freezer and I had A LOT of cilantro in the garden that needed to be cut before it starts to bolt. The ajicitos (aji dulce - small sweet peppers) the hubby picked up for me were not enough for this batch, considering my red pepper was more than questionable (compost material). Then I remembered that I had a whole bag in the freezer from last year’s garden harvest. Woohooo!!! Thankfully, I had all the other goodies needed for a batch. It’s a lot of work, but so worth it.

I ate dinner at 9pm. 🤣

This was our dinner on Saturday! We LOVE salmon so much! Normally I would it on the cedar planks but it was a last minute decision and I didn’t have enough time to soak them. We decided to use our copper grilling mat instead (not pictured). It was the way to go!! We also grilled asparagus and served over leftover basmati rice.

When your bestie digs for clams and brings you some, you make bucatini alla vongole. Of course I used Artie Bucco’s recipe from The Sopranos Family Cook book with minor tweaks!
