Nova brewing is a sake brewery in Los Angeles that’s making LOCAL sake. After their launch in 2019, their sake quickly earned recognition and now they produce award-winning sake and beer in Covina, California🏆👏
100% of the rice is sourced in California, and they use hand-crafting techniques learned from a brewery in Ibaraki, Japan. Their sake is rich in flavor, bold and higher in acidity. It’s a perfect drink for rich food culture in LA.
also, “Hatsukoi”, their limited strawberry nigori, is an absolute fun beautiful delicious happy sake🍓🍰😍

“Hamu-Katsu” is a simple, delicious, popular Japanese dish. It’s a cutlet with thinly sliced ham, breaded with Japanese panko, and deep fried till golden color. “Ham Cutlet” = “Hamu-Katsu” but as it is for a lot of Western-influenced Japanese dish, it’s a different game.

Nova Brewing was founded in 2019 with a passion for sake making but more importantly, a passion to create a space in LA where locals can see, smell, and taste fresh sake. After meeting at sake school and brewing(!) this idea, James went to Japan and learned sake brewing, while Emiko took over an old winery/brewery in Covina and turned it into a sake and beer brewery💪
Their unpasteurized ‘namasake’ uses local rice grown in North California and Californian water🌾🏔️ while they import traditional sake yeast and high quality koji spores from Japan (though they make their own koji!)
Sake making is not an easy task, but this hardworking duo, together with their awesome team, made a singular and successful sake brewery in Covina🙌

Acidity helps shape the balance of sake, and influences flavor, mouthfeel, and pairing. Different acidity level offers different impression - smooth or sharp? subdued or vibrant? floral or earthy? and so on.

A century-old question: “How much is your omakase?” And now we have an answer!☝️
Ever since our old days as Uerukamu in Tarzana, we’ve stayed true to what Omakase means. It’s “Trust the chef” and “Leave it to the chef” – conceptually different from a course menu. It is more of an experience, a catch between customers and chef/team, and it’s meant to be unique for each customer, each day, each occasion🙂
Time has changed, and the word Omakase is now widely accepted in the dining scene. As Omakase grew uniquely in the US, we became aware that expectations for “Omakase” have also evolved. We’re often asked what’s in Omakase, how many plates there are, and how much it costs, as if it’s already pre-set.
Here’s our secret: nothing is set before you sit at the table. Is it efficient? Maybe not. But we believe part of the joy (for you and for us) is sharing the experience and discovering the unknown together.
But how intimidating it can be to jump into the unknown! So, how about we set the price beforehand? For the first time in 30 combined years, our Omakase has a pre-set price! 😆
Don’t worry– we still offer our original style of “just leave it to us” omakase. For our regular customers, we already know what you like, what you might like (but don’t know yet), and we make sure to change things up each time.
This style also benefits those who often find a “full meal” portion too overwhelming, those whose appetites vary, or those who prefer going with the flow and stopping when they feel like it.
“Variable” pricing does not mean it’s higher than the set price. (we’ve seen anywhere from $60 to $180 ish)
As we have a small team, please understand that Omakase is subject to availability. If you already know, we kindly ask you to make a note requesting Omakase when you make a reservation!🙏
We still won’t have everything laid out and pre-set before you sit at the table, but our hope is you can relax and enjoy our dining experience🍶🫶🥰
