new on the list from 🫶 an incredibly layered, complex, bracingly in-your-face style of nama from Chochin Shuzo out of Aichi prefecture. wrapped in newspaper (shinbunshi) and brewed with densely mineral-rich water, this is a sharply angled glass that drinks very dry but also somehow, at the same time, ethereally featherweight. a truly special bottle that reminds us how endlessly fascinating sake is. try it paired with the fried chicken nanban, or even the mushroom and cheese okonomiyaki

going a little off-script today with this limited special for Lunar New Year: Mom’s Tết Salad, courtesy of chef de partie

crunchy cabbage, fish sauce vinaigrette, poached chicken, a ton of Vietnamese herbs, crispy shallots, prawn crackers 🎆🎆🎆 on the menu tonight

so much fun to think about pairing sake with these flavors, come give it a try (and Chúc Mừng Năm Mới - Happy New Year!!)

This Sunday, January 26: we are just BEYOND thrilled to be welcoming the brilliant Jun Kono-san, fifth generation president of the esteemed Sohomare Brewery in Tochigi, to will join us behind the bar for an introduction to their brewery, followed by guided tasting of five sakes, with plenty of time for Q&A and one-on-one conversation. The lineup will include the brand new Junmai Daiginjo ‘Ki-Itsu,’ freshly arrived in the United States for the first time.

Sohomare is truly a legendary brewery - small but mighty - with a focus on top-class Yamada Nishiki rice and the ancient, hand-crafted Kimoto brewing method. Their sakes have had a home on our list since the day we opened, and are often top-of-mind when considering pairing. Our longtime friend and legendary bon vivant will also be in the house to drop some wisdom on us all 🫡

Ticket price includes seminar, flight of five sakes, and a small snack. Link in bio to book a seat

Kitchen will open at 5pm, and sake school attendees are of course welcome to stay for dinner 🌼🌼🌼
