This is 조재환 Cho Jae Hwan & 조순호 Cho Soon Ho.
They are the sweetest Korean couple & they also supply us with a lot of our 나물 (namul) for our banchan!
They harvest everything with love and care + bring me snacks (even though I tell them not to.)

Today, they surprised me with some 비름나물 (amaranth greens)!
They also bring us the 쑥갓 (chrysanthemum greens) that goes into our fish stews, as well as 열무 (young Summer radish) that becomes water kimchi, and more.

Thank you all for supporting our small business, which in turn, allows us to support others in our community. 🫰

매운 갈비찜 - Spicy Galbi jjim
Cut table side ✂️

It takes about 2.5 days to prepare our Galbi jjim. We first make the braising liquid with over 16 aromatics and our veggie stock (consisting of allium skins, scallion ends, peels, etc).
Each order comes with 1.25lbs of ONLY center cut short ribs that we braised twice. We take the extra step to chill and skim off all of the fat from the braising liquid, which results in a clean, yet flavorful sauce that isn’t greasy.
When ordered, it is braised again and then finished with rice cakes, jujubes, carrots, mu (Korean Radish), the reserved braising liquid, and date cheong (fermented date syrup).
