1 head of cauliflower steamed until tender in bite size pieces
6 boiled eggs (when done peel eggs, rinse and separate yokes into a bowl. Then mash the yolk and cut the whites into small bite size pieces then blend
1/3 cup mayonnaise
3 tbs of mustard
3 tbs of pickle relish
1/8 cup of chopped onion (uncooked) can use more if you prefer
salt/pepper to taste
mix all together and you can garnish with egg slices and parsley
chill over night

PASTIERA, THE TRADITIONAL NAPLES CAKE
Pastiera is a type of Italian cake made with ricotta cheese. It originates from the area of Naples. It is a typical cake during Easter time. The pastiera is a pie pastry filled with a mixture made with ricotta cheese, candied fruit, sugar, egg and wheat boiled in milk. The dough is crispy while the filling is soft.
INGREDIENTS for 10-12 people
300 g of plain flour
8 g of cake yeast
150 g of sugar
grated zest of 1 lemon
150 g of cold butter
400 g of fresh ricotta cheese
200 g of sugar
grated zest of 1/2 lemon
250 g of cooked wheat
orange flower extract aroma
100 g of candied orange and cedar peel
Pour the plain flour with the yeast in the mixer, add the sugar, a pinch of salt and the lemon zest.
Add also 2 eggs and the butter cut into cubes (colder is better).
Mix all the ingredients as fast as possible to not overheat the butter.
Then work quickly the dough by hands. Use also a bit of flour if it can help.
Wrap the dough into the plastic wrap and let it rest in the fridge for at least 30 minutes.
Separate 2 egg yolks from the whites.
Work the ricotta cheese with the sugar into a bowl until it becomes smooth and creamy. Add the yolks.
It's time for adding the orange flower aroma extract.
Mix again with a hand whisk to avoid ricotta lumps and make it more smooth.
Add candied fruits. Then a pinch of cinnamon and the grated zest of half a lemon.
Finally add the cooked wheat and mix everything.
Whip firmly the egg whites with a pinch of salt. Add the whipped whites to the mixture and mix gently from the bottom to the top.
Cut 1/3 of the dough for the decoration. Leave it in the fridge.
Then roll out the dough into a buttered baking tin. Make it as thin as possible.
Then pour the filling over the dough and level it with a spatula.
Make some stripes with the rest of the dough. Create a chessboard over the filling with the stripes.
Let's bake it at 180°C (355° F) for 55 minutes. It must become golden brown color.
Let it cool completely before cutting and serving it. It's also better if you'll eat the day after.
