Changing it up, tryin to eat healthier. Googled fettuccine, shrimp, basil, sun dried tomatoes. Because that's what I had on hand. Every recipe included heavy cream or ingredients that would make my doc shudder..😂 So here's my improved recipe..simple..
1/2 stick of butter
2 tablespoons of olive oil
Teaspoon of garlic
1 bag of Aldi's cooked shrimp
4 swiss chard leaves
3/4 cup sundried tomatoes
Fresh basil and chives to taste (add a bunch if u love it)
1 refrigerated fettuccine pasta
Sprinkle with Cojita cheese
I heated the large skillet on med high, with the butter and oil, toss in garlic and chard, saute till greens wilt, add tomatoes, toss in basil, saute a couple mins. Throw shrimp in for 1-2 mins. Add cooked pasta, turn off burner and stir. Then serve. Yummy !!
