Two new flavors are starting this week! Ginger Rosemary and Hot Honey Salted Caramels will be available at the Lawrence Farmers Market starting tomorrow. I will also have Butter Pecan, Chai Spice, Cinnamon Roll, Coffee, Hazelnut, Honey Lavender, Peanut Butter, Pistachio, Rum, and Vanilla. The variety packs will have Butter Pecan, Chai Spice, Coffee, Hazelnut, Peanut Butter, Pistachio, Rum, and Vanilla in them. Stop by and try a sample!

Do I know how a ginger and rosemary simple syrup will taste in caramel? No, but I'm going to find out this week! I've tasted the syrup, and the ginger has a bite to it, while the rosemary gets you on the backend. Stop by the Lawrence Farmers Market this Saturday to give it a taste!

I ran out of the dark green foil sheets for the Butter Pecan Caramels, so about a dozen pieces have a different wrapper. The variety packs will have pieces with the proper wrappers, but a lucky few will have a fun temporary replacement while I wait for the shipment to come in.

Hi Everyone! A project I've been slowly working on is to have a reference guide for all of the store-bought flavorings I use in my caramels. I've had a number of people ask about allergens, such as which one have caramel coloring (several of them), gluten (none of them), and nuts (the Torani Butter Pecan flavoring contains peanuts!). So please, do not hesitate to ask questions about ingredients. I'll have this reference with me at every market.

If there is a flavor you are wanting and cannot make the Saturday market, please reach out, and I'm happy to meet you at any grocery store in Lawrence to get it to you. Fun and/or interesting (you decide) facts about my caramel.

It takes *forever* for it to reach 220°F but once it is at 230° I have to hover over it, or it'll burn before I can blink.

On bright sunny days it cooks up so much faster because I'm not also cooking off moisture in the air. Because of that, it can sometimes reach the right consistency before it gets to the rich caramel color.

The caramel is a high-fat recipe (I'm sorry to disappoint you, it is not, in fact, a vegetable 😉) with high quantities of heavy cream and butter, so it doesn't seem to be as "sticky" as others that like to stay with your teeth.

I've been making a version of this recipe since about 2011, and spent several years adjusting ratios and ingredients to get it to what it is now. I had a lot of very willing taste testers along the way!

This week I'll have all 11 flavors and the variety packs are back; they will have all but the Chai Spice flavor in them. Stop by Cottin's Hardware Farmers Market Thursay 4-6:30 pm and the Lawrence Farmers Market Saturday 7:30-11:30 am to grab yours!
