Easy Sourdough Bread

Ingredients
150 g active sourdough starter
328 g warm filtered water
9 g olive oil
20 g honey
500 g bread flour
11 g fine salt
Steps
Combine flour and salt in a bowl and make a small well in the center.
Pour in the starter, water, olive oil, and honey mixture and mix until a shaggy dough forms.
Fermentalyse (autolyse) for 1 hour.
For the first 2 hours of the bulk ferment, stretch and fold the dough every 40 minutes, keeping it covered between rounds.
Continue the bulk ferment for 5 to 10 hours depending on your kitchen temperature and dough warmth. The dough should nearly double and peel away from the sides of the bowl easily.
Gently shape, being careful not to release the gases or deflate the rise.
Second proof and same-day bake, or cover and cold proof overnight for a next-day bake.
Let the dough rest on the counter while your Dutch oven heats at 450°F for 1 hour, staying covered.
Bake
Place dough in pot on parchment or a baking mat, cover, and lower oven temperature to 415°F.
20 minutes covered
30 minutes uncovered, or until deep golden brown.
Cool on a wire rack before slicing.
