Early Norwegian settlers celebrated their harvest with beer, and with that beer came Kveik, a Norwegian farmhouse yeast. Farmer’s would propagate their own house strain by drying beer on rings and hanging the rings about their hearth, passing on their strain from generation to generation. Kveik is a robust strain of yeast that survives the frigid winters of Norway and ferments well at unheard of high temperatures, producing tropical and stone fruit esters that run throughout this cider. Unfiltered. Minimal Intervention. Now available.

At Wilson’s Orchard, take a walk, eat an apple — or a three-course meal

Wilson’s Orchard and Farm, located just off Highway 1 north of Iowa City, has long been a local landmark and a must-stop on many families’ fall agenda for u-pick apples and pumpkins.

But these days, Wilson’s is growing up—or growing differently, you might say—into a model of sustainability and a highlight reel of the importance of local foods.

With that in mind, Rasch and his team of young, eager agriculturalists have also sought, especially in the last couple of years, to enhance the role Wilson’s plays in the local foods and sustainability picture.

Of course, telling the story of sustainable farming practices comes with its challenges. “It's easy to say we're going to be sustainable, but in this climate with humidity and too little water, it can be a real challenge. So bringing people out to the farm is a way to kind of showcase to people the challenges we face. Sustainability, whether economic or ecological, requires constant attention, constant experimentation, and a lot of failures and a lot of learning. We invite people to see that here.”

At Wilson’s Orchard, take a walk, eat an apple — or a three-course meal Wilson’s Orchard and Farm has grown beyond its apple-picking roots into a hub for sustainability and community.

Our Future

It’s been quite a year. Our’s is a business rooted in the vagaries of weather, so we’re used to freezes (2012), drought (2013), floods (2008) and rain soaked Falls that keep customers away (2019). But this pandemic brings a whole raft of new challenges to our farm.

More importantly, COVID 19 has revealed the soft underbelly of our food system and underscores the need to build a more resilient agriculture. As a fourth generation farmer, I grew up in a monoculture fruit farm. Unlike my grandfather’s day, there were no animals in the picture, no vegetables, no pasture -- only acre after acre of fruit trees. Just like a corn/bean operation here in Iowa. I have seen first hand the fragility of that system, both economically and environmentally. A lot of family and friends that I grew up with are now gone from farming, their land swallowed up by ever larger, centralized operations.

This pandemic has had an impact on agricultural businesses for sure. But well before we heard of coronaviruses, agriculture was in a bad way. Too much production of too few crops. High input costs and environmental degradation. Cheap food that ships well, but has little nutrition or flavor. Consolidation of meat packers. The list goes on. When there is not enough meat in supermarkets and animals are being euthanized on farms by the thousands, we should all be wondering “what is wrong with this picture?”. And doing something about it.

This is not a new problem and we have been thinking and working on solutions on our farm for some time. Our vision is a farming operation that actively works to regenerate the soil and rebuild the connection between people and the land their food comes from.
