Thanksgiving Side Dish Alert: Colorful, Crunchy, & Balanced!

Let’s talk about the Thanksgiving plate! 🦃 As a dietitian, I always tell my clients: you don’t have to skip your favorites (hello, stuffing!). The secret is adding volume with a fiber-rich veggie side.

This Maple Balsamic Brussels Sprouts recipe is my go-to. It takes 5 minutes to prep, looks beautiful on the table, and helps keep your blood sugar steady amidst all the pie. 🥧

The Recipe: 1️⃣ Preheat oven to 400°F (200°C). 2️⃣ Toss 1 lb halved Brussels sprouts with 2 tbsp olive oil, salt, and pepper. 3️⃣ Roast for 20-25 mins until crispy on the edges. 4️⃣ Mix 1 tbsp maple syrup + 1 tbsp balsamic vinegar. 5️⃣ Combine hot sprouts with 1/3 cup chopped pecans, 1/3 cup dried cranberries, and the dressing.

Why I love it: ✨ High fiber to keep you full. ✨ Antioxidants from the cranberries. ✨ Healthy fats from the pecans.
