The beginning of galangal ice cream. As with all gingers, the galangal should be blanched before being heated with the milk and cream, or it can cause the milk to curdle. In China they do that deliberately.
The active ingredient is proteolytic enzyme called zingibain that breaks down the k-caesin that keeps milk stable and forces the proteins to form in clumps.

Now I remember. It was the third to last farm dinner I did and this was the old location of Fincas Tres Robles.
50 people, here is the menu.
Thai style cucumber salad with suyo cucumbers, hot banana peppers, lemongrass and chives
Texas Gulf Coast bycatch barrel fish ceviche
Green carrot soup with turmeric
Texas cheese plate with local bread, lavash crackers, farm butter, Castelvetrano olives, runner bean chutney
Organic Texas lamb fore-shanks with mint and port wine reduction (this was changed to roasted, rolled lamb shoulder)
Sweet corn with chef’s butter
Sautéed chard
Duck egg crème brûlée
Organic oatmeal cranberry cookies

The hand hammered wok was a gift from a friend 40 years ago.
Inside the vegetable part of the stir fry: Toasted sesame oil, olive oil, tamari sauce, mirin, lime juice and fish sauce for the liquids:
Broccoli, carrots, onions, garlic, zucchini and enoki mushrooms for the vegetables.

Left over roasted pork shoulder, chopped and seared with tamari sauce and a little balsamic vinegar for the meat portion of a stir fry.
