🤩 Recipe Highlight! 🤩
A little weeknight dinner 🍽️ inspiration!
Grab a few packages of our ground beef and throw together this quick and easy homemade meaty marinara sauce served over roasted spaghetti squash (or spaghetti noodles)...whichever your family prefers, it is delicious both ways!

Roasted Spaghetti Squash with Homemade Meaty Marinara Sauce
Ingredients
For the Squash:
1 Spaghetti Squash
Salt
Pepper
Olive oil
For the Meaty Marinara:
1 lb ground beef
Olive Oil
1/3 C diced onion
4 cloves of garlic
1/4 tsp crushed red pepper
28oz can of San Marzano whole tomatoes
1 tsp oregano
Salt
Pepper
Basil, fresh
Parmesan cheese rind, optional
Instructions:
For the Squash:
- Preheat the oven to 425º.
- Cut the squash in half lengthwise, rub the cut sides with olive oil and generously salt and pepper.
- Lay the squash cut side down on a baking sheet and roast until a knife can easily be inserted into the squash.
- When the squash is cool enough to handle, scoop out the seeds and using a fork, scrape out the “noodles” of the squash into a large serving bowl.
For the Sauce:
- Brown and drain the ground beef, set aside.
- Saute onion and garlic.
- Add the red pepper flakes and sauté for a couple minutes until fragrant.
- Add the remaining ingredients (not the basil), use a wooden spoon, potato masher, or immersion blender to break up the tomatoes.
- Finally, add the basil.
- If you have the rind of parmesan cheese, add it now.
- Simmer for 20 minutes.
- Taste for seasonings.
- Add the ground beef back into the sauce and warm through.
Top the squash “noodles,” or pasta noodles, with the meat sauce.
Grate fresh parm over the top of the dish.
