A few of us are getting together to compete on the 29th and 30th in Hempstead.., but this is much more than just a cookoff. We’re coming together in the best way we know how to raise some money for our fellow Texans.
My thought? I’d love to walk up to check-in on that Friday, or at awards on Saturday, and hand Dustin an envelope full of cash, or a check, that goes straight to these families of this tragedy. From my perspective, that would be more rewarding than any trophy, check, or buckle for cooking food.

FIREDISC Friday!
Going to start with some crawfish eggrolls and some breaded jalapeno popper bites, then move on to some Bang Bang Shrimp for dinner…
Yacht Rock filling the patio and backyard, and The Banquet Beer is ice cold and so tasty.

The dust has settled in Aggieland… and while the Ags woke up upset, I sure as hell didn’t!
Very honored to have been asked to represent Turtlebox this weekend at the Inaugural 13-0 Burn in Aggie Park. I think we did them proud. Had the next-to-last number called on brisket… I’ll take a 2nd Place walk every day of the week. Judges weren’t as impressed with our ribs or bird, but I was very happy with what we put in the boxes.
Can’t tell y’all how good these Heath Riles BBQ products are… I won’t even hide behind it, since I’ve started introducing these products into my cooks, I’m more impressed, week to week. And the Beef Injection - Garlic Jalapeno - Beef Rub combo punched the ticket today!!!

So this is pretty cool…
I’ve been afforded and blessed with the opportunity to represent Team Turtlebox at Aggie Park on Saturday.
If you’re going to be around, stop by and say “Howdy”. We’ll be putting three boxes together, in hopes of being the last name called.
The rekindling of one of the greatest weekends of college football, in the shadows of Kyle Field… it’s going to be an EPIC day.
And you know it’s going to be loud… get ready to have some fun, and LIVE FREE.

Fun times are ahead… tonight we met with parents and students at Katy HS, to officially resurrect the BBQ Team for the high school. Mi amigo and I will be the non-staff mentors for the kids, as they prepare to compete in the Texas HS BBQ Association. It will be awesome to share what I’ve learned over the years with the next generation of bbq cooks. Going to be an awesome ride, and can’t wait to get to work!

Of all the outdoor cooking devices I have… this Weber kettle is Ol’ Faithful. And I haven’t put her to use enough lately. Today, I wiped it down, cleaned it out… and we’re about to put ‘er to work. Link or two of Eckerman’s garlic beef and pork, a little crab Rangoon dip to snack on, and then for the stars of the show - some chicken breast skewers with Heath Riles BBQ Honey Chipotle and a rack of Prairie Fresh St. Louis style pork ribs with a little bit of almost everything from Heath Riles Heath Riles BBQ… splash of Garlic Jalapeno, splash of Competition Rub, maybe a shake or two of the Honey Chipotle, and definitely some Butter Bath. Going to be a grand afternoon and evening in the patio cooking, sipping on a cold beer, and blasting Jimmy Buffett on the Turtlebox.

So… since last August, when I had the distinct honor and pleasure of meeting Heath Riles in Key West, I’ve been on a mission. This guy is hands down the best of the best, as far as ribs go… it’s science. He also may be the best in the sauce and rub game… Fast-forward, he and his crew joined us for HLSR Cookoff in February, and I got to get in the weeds with him and his guys. Mind-blowing experience… Mitchell Bedwell and Shane Smith LeClair, along with Heath, are as good as gold. The knowledge they’ve shared, has started me in a different direction, as far as competition meats go… good things are on the horizon… Gentlemen, I thank you for your guidance and your friendship. Muchos gracias from this ol’ boy from South TX.

Personal note… the Garlic Jalapeno Rub may be the single-greatest seasoning I’ve ever had the pleasure of tasting and using. The most versatile rub I’ve ever seen! Get some, then get some more!

Saturday is going to be a fun one… Slider bar for 300 hungry 8th graders, as they celebrate wrapping up their junior high journey. Was really cool to get asked to do this. Can’t wait!
