We’re about to switch to a housemade mint chutney made with small green chilies.

It’s funny how much effort can hide behind something so small.

For years, we weren’t in a position to care about details like that. We were busy trying to earn the right to exist. Trying to make sandwiches worth coming back for. Trying to build a team. Trying to make it through another day. Trying to understand what our guests were actually asking of us.

People often think craft begins with obsession over details.

I think it begins with humility.

The humility to accept that most things are not yet yours to decide. That before you can become specific, you must first become reliable. Before refinement comes repetition. Before taste comes discipline.

Specificity is a privilege.

Not because it is expensive or exclusive, but because it can only emerge after years of attention.

Today you may love what we do. Tomorrow you may not. The day after that, perhaps you will again.

None of us are ever finished. None of us stay understood forever.

All we can do is continue paying attention.

And sometimes that attention leads you all the way down to something as small as a green chili.

Not because a green chili changes everything.

But because, after enough years, you realize that everything is hidden inside the smallest things. Your Bombay and Chicken Tikka Sandwich is about to get a major upgrade.
