- start with pork cushion meat if you like a leaner cut, or use pork shoulder chunks if you like a little fattier meat

- dice your pork into 1 inch chunks

-marinate overnight preferably, in sour orange, garlic, onions, cumin, oregano, salt and pepp OR store bought Mojo is just as good! I like using

- place in your air fryer basket in a single layer, it’s ok if they are touching as they will shrink about half in size. Air fry at 400 degrees for 15-20, making sure to shake halfway, until they are crispy to your liking ⭐️ Pro tip ⭐️ toss some onions in that leftover mojo and drop in the last 5 minutes if air
frying

- plate with limes and your favorite hot sauce and you got the perfect meal or protein snack easy as that!

A weeks mealprep for the athletes over at 🎾

After a remarkable season last year, we’ve continued this year with both men’s and women’s tennis at the University of Miami 🟠🟢⚪️

Here’s what a full week of nutritious and balanced athletic meals looked like…

Each time we make our ever so popular CHICKEN VACA FRITA we are left with gallons on gallons of chicken broth from the boiling and shredding process. We then take this broth and fortify with some more chicken, tons of veggies and aromatics, potato and pumpkin, and a ton of fresh green culantro! Each serving has 6 ounces of chicken and a handful of noodles to ensure a hearty and filling soup! Personally I like mine with a squeeze of lime, a dash of hot sauce, and some crunchy mariquitas on the side 🇨🇺
