Hidden Fire won the Galvinell Hogfest a few weeks ago. Our hog was a very, very fine hog!

Another season's almost here. Hidden Fire is ready to take the pit in competition - who wants in?
Year is wrapping up; had to skip Hogfest because of travel and work (boo!). Already planning for Pork in the Park next year!
So: 30th overall at Swinetastic, and we had a blast. Great work by the team, including our newest parsley packers!
Competing at Swinetastic tomorrow. Team effort, with everybody contributing. Can't wait, no matter how crappy the weather.
Cooking a pig this Friday for my referee buds. Forecast calls for high 80s and rain. What fun...
Heading up to Meadow Creek this weekend. Gonna pick up a wee bit of wood - two full cords of Oklahoma pecan. Should last a week or two...
Another brisket test. Too little rub this time - but great appearance, very tender, doggone tasty - and even better the next day. Almost ready for Pork in the Park!
The verdict: off to a good start. Nice smoke ring and bark; rub was a bit too spicy (but "magic ingredients" added nice flavor note and color); grass fed beef didn't have much fat so not as tender as I wanted - but overall pretty doggone good.
