Eggs + chicken breast + turkey + avocado + Costco's plant based queso + Cholula.
Hubs got eggs + pork tenderloin + turkey + cheese.
Now: time to relax and enjoy the fact that we have NOTHING on the calendar for awhile.

‼️Do you miss gooooood sauces being gluten and dairy free? Especially RANCH.
Luckily, there are so many new options.
I swear I buy every new one I find to test it out and a good portion of them just suck.
This buffalo ranch does not suck 😍
We always have a stand up freezer full of meat (thanks to my hunting family) and I'm just not a fan of steak sauce.
I grabbed a buffalo ranch ( Sir Kensington's brand) yesterday and I can say with certainty that I'll be topping everything with it in the foreseeable future.
Gluten free. Dairy free.
I need sauces on eeeeeverything. It's a running joke in my family because I put random sauces on things you wouldn't think need it. This one is now at the top of my fav list!

🍫🍒These chocolate cherry crackle cookies were SO good, they've officially taken over as my favorite cookie. Gluten and dairy free, of course!🍒🍫
✨A MUST for Christmas this year and perfect to add to your baking list if you give out cookies platters!
✨Still working on my blog so the recipe is below! SAVE this for later!
1 3/4 cup gluten free 1:1 flour (I used and YES - it makes a difference, big time in gluten free baking)
3/4 teaspoon baking powder
1/4 teaspoon salt
1 stick butter, @ room temp
1 cup white sugar
1/4 cup packed light brown sugar
1 egg
1/3 cup cherry jam or preserve
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon red liquid food coloring
1/2 cup dairy free mini chocolate chips (or chop up chocolate chunks)
1/3 cup dried cherries, roughly chopped
1/2 cup powdered sugar
🍒Whisk flour, baking powder, and salt in a medium bowl.
🍒In a stand mixer or with a hand mixer, beat butter, 1/2 cup white sugar, and brown sugar on medium high speed until light and fluffy, about 3 minutes.
🍒Beat in egg and combine.
🍒Add jam, almond, vanilla, and food coloring. Beat until combined.
🍒Bring speed down to low and slowly add flour mixture. Mix until just combined.
🍒Stir in chocolate and cherries with a spoon.
🍒Cover and chill 1 hour or more.
🍒Heat oven to 375
🍒Line 2 cookie sheets w parchment paper
🍒Put 1/2 cup white sugar on a plate and powdered sugar on another.
🍒Roll heaping tablespoons into a ball. Roll in sugar. Roll in powdered sugar.
🍒Leave in ball-form and place 2 inches apart.
🍒Be sure to switch pans half way through baking. 15 minutes total. They should be just cracked and dry on top. It's ok if they look undercooked at this point.
Remove from oven, let sit on pan 3 more minutes. Move to cooling rack.

‼️Need something SIMPLE after the holiday weekend? There should be ZERO guilt in indulging, but it feels good to give my stomach a break.
Lettuce + chicken breast + rice/quinoa mix + shredded carrots + Caesar dressing

🍴🥗 I posted this picture on my stories the other day and got a kick out of how many messages I got for the recipe.
It's just a thrown together salad based on the one I get at all the time, with a few substitutes depending on what I had on hand.
..and I probably have it 4x/week😍
SO! Here it is:
Chicken breast
Rice/quinoa mix
Hot sauce
Mashed avocado
Spring mix + spinach
Shredded carrots
Brussel sprouts + asparagus (popped in the mic to soften then quickly browned to crisp in a pan on high)
Other things I use in these bowls:
Hummus
Shredded cabbage
Shredded brussel sprouts raw
Sunflower seeds
Croutons
Roasted sweet potato
Roasted cauliflower
Dairy free ranch
A million ways to spin it and it's so easy to use up whatever you have!
The basics are:
Protein + grains + roasted veg + greens + sauce

We took my step dad to Beer and Fish Company for his birthday last night and it's SO NICE to go out to eat and know you'll have plenty of options.
This seafood platter is insane. So much food!
Oysters, king crab, lobster tail, and jumbo shrimp!

I never sugar coat it and describe dairy free cheese as "just like the real thing" but really hits the nail on the head with all their mac & cheese flavors.

‼️Suuuuper creamy, dairy-free chicken wild rice soup 😍 This is, for sure, the coziest soup I've made! And best yet, it's a crockpot recipe so you can toss everything in and come back in a few hours!
✨Save this one so you can try it later! Great for leftovers, or make this for a crowd! 🚨Do you ever have those weekends where people are in and out of your house, grazing as they go? This is perrrrfect for everyone because it doesn't taste like it's missing the dairy!

1 cup uncooked wild rice
1 lb chicken breasts
1 cup carrots, chopped
1 cup celery, chopped
1 small onion, chopped
5 cloves minced garlic
2 teaspoons salt
1 teaspoon pepper
1 teaspoon rosemary
1 teaspoon thyme
8 cups chicken broth
3 bay leaves
1/4 cup dairy free butter
1/2 cup gluten free 1:1 flour
1 cup dairy free milk
+ More milk for more creaminess - I add another 3/4 cup
Salt and pepper to taste
✨Add first 12 ingredients to the crock pot. Stir. Set to high 4-6 hours or low 6-8.
✨When rice is cooked through, remove chicken breasts, shred, and add back to the crockpot.
✨In a sauce pan, heat butter. Add flour and stir 1 minute. Slowly add milk. A thick paste will form.
✨Add this to the crockpot and stir until it disolves. Add additional milk, s&p.
